I have made this easy guacamole dip literally hundreds and hundreds of times over the years, and my friends and family always say “ please can I have that Guacamole recipe. It’s made with all of the usual fresh ingredients you would find in a classic authentic guacamole recipe, plus the addition of smoked crisped bacon, which I’m convinced rounds all of the flavors. But the thing I love most about this guacamole recipe is that the ingredients are all perfectly balanced, salty, creamy and bright . It’s not too spicy, not too citrus-y, and it’s perfectly salted so that the ripe avocados remain the stars of this guac show.

Guacamole Recipe

The best guacamole keeps it simple: just ripe avocados, salt, a squeeze of lime, onions, chilis, cilantro, and some chopped tomato. Serve it as a dip at your next party or spoon it on top of tacos for an easy dinner upgrade.

Guacamole! Did you know that over 2 billion pounds of avocados are consumed each year in the U.S.? (Google it.) That’s over 7 pounds per person. I’m guessing that most of those avocados go into what has become America’s favorite dip: guacamole.

Guacamole: A Classic Mexican Dish
The word “guacamole” and the dip, are both originally from Mexico, where avocados have been cultivated for thousands of years. The name is derived from two Aztec Nahuatl words—ahuacatl (avocado) and molli (sauce).

Ingredients for Easy Guacamole
All you really need to make guacamole is ripe avocados and salt. After that, a little lime or lemon juice—a splash of acidity—will help balance the richness of the avocado. If you want, add chopped cilantro, chilis, onion, and/or tomato.

How to Pick Perfectly Ripe Avocados
The trick to making perfect guacamole is using avocados that are just the right amount of ripeness. Not ripe enough and the avocado will be hard and flavorless. Too ripe and the taste will be off.

Check for ripeness by gently pressing the outside of the avocado. If there is no give, the avocado is not ripe yet. If there is a little give, the avocado is ripe. If there is a lot of give, the avocado may be too ripe and not good. In this case, taste test first before using.

How to Cut an Avocado
To slice open an avocado, cut it in half lengthwise with a sharp chef’s knife and twist apart. One side will have the pit. To remove it, you can carefully tap your chef’s knife against the pit and twist to dislodge it (protecting your hand with a towel), or you can cut the avocado into quarters and remove the pit with your fingers or a spoon.

How to Store Guacamole
Guacamole is best eaten right after it’s made. Like apples, avocados start to oxidize and turn brown once they’ve been cut. That said, the acid in the lime juice you add to guacamole can help slow down that process. And if you store the guacamole properly, you can easily make it a few hours ahead if you are preparing for a party.

The trick to keeping guacamole green is to make sure air doesn’t touch it! Transfer it to a container, cover with plastic wrap, and press down on the plastic wrap to squeeze out any air pockets. Make sure any exposed surface of the guacamole is touching the plastic wrap, not air. This will keep the amount of browning to a minimum.

You can store the guacamole in the fridge this way for up to three days. If the guacamole develops discoloration, you can either scrape off the brown parts and discard, or stir into the rest of the guacamole before serving.

Guacamole Variations
Once you have basic guacamole down, feel free to experiment with variations

Simple Guacamole: The simplest version of guacamole is just mashed avocados with salt. Don’t let the lack of other ingredients stop you from making guacamole.
Quick guacamole: For a very quick guacamole just take a 1/4 cup of salsa and mix it in with your mashed avocados.

For the next eight months they stay on the tree that’s when oils go in there so if you picked it off after four months there’d be no oils would be dry you’d have it and you’re like what the heck is this and when you go to the store

Look for one that’s darker in color remember they start from here down ripening you know when it’s fully ripe when it’s soft at the bottom so don’t start poking at the top first thing we’re going to do put it on the countertop you’ll see some people do it

In the hand what i always try to teach you at home is don’t do that because when we’re making guacamole we don’t want to cut our hand there’s nothing worse so i’m going to come in to the side can you see this coming around it

You know there’s a big seed in there i’m just coming around so that’s one of the safest ways and then we know it’s going to be in half give it a little twist now with the seed we just want to use the end of the knife

Just using the end of the knife twist it and twist it off see how i’ve twisted that and then you can just use the side of your board to push it now when you’re doing that you’re not a samurai you don’t have to like okay i’m going to show you it again come

In can you see that one coming in twisting put your hand on the top just coming around it twist it open like that then with this piece look in twist on the side of the board or in a bowl i see a lot of people and what they do is they’ll start doing

Hadn’t been like david beckham it wouldn’t be quite the same and to be honest with you if you had a better body like david beckham i wouldn’t be cooking in here remember that avocados they don’t have salt so you need to add saltily avocados just need salt they don’t have acidity

Neither so we need to add acidity to it normally as we know in mexico they don’t really use lemons they use limes so when we buy a lamb we always want it bright and green so you don’t really want one what’s yellow you want it nice

And green so i’m going to cut the lime in half and you can see he’s nice he’s not an old line so just a small amount don’t get too excited for three limes sorry for three avocados i use about one tablespoon of juice and i know what
