Sweet Potato Chili
5 cups diced sweet potatoes (about 3 medium sweet potatoes)
1 onion, diced
1 green bell pepper, diced
1 red or orange bell pepper, diced
3 cloves garlic, minced
1 28 oz can of crushed tomatoes
2 cans of beans
1 tbsp tomato paste
1 chipotle in adobo pepper, seeded, diced
3 cups vegetable stock
1 Tbsp chili powder
1 tsp cumin
1/2 tsp cayenne pepper
1 tsp garlic powder
1 tsp onion powder
1/2 tsp smoked paprika
1/2 tsp dried oregano
2 tbsp olive oil

Toppings and Garnish:
sliced avocado
diced tomato
sour cream or greek yogurt

Hello everyone welcome and welcome back to my Channel today we are making a hot and spicy sweet potato chili recipe that is sure to keep you warm and cozy this winter but before we get started don’t forget to hit the like button subscribe to the channel and click the

Notification Bell to be notified of future uploads now let’s get started so I’ll get started by peeling and dicing my sweet potatoes and I’m using about three medium siiz sweet potatoes here feel free to dice them whatever size you like now I’m going to add about 2

Tbspoon of olive oil to a large pot and then I’m going to add in my diced onion and I’ll season it with a little bit of salt and pepper and I’m just going to cook the onions for about 5 minutes or until they’re very soft and trans

Ucent now I’m going to add in my diced bell peppers and I’m going to allow this to cook for another 3 minutes or so before adding in my tomato paste minced garlic and diced chipotle peppers so I’ll stir the ingredients well to combine and then I’m just going

To cook this until we can smell the garlic after that I’ll go ahead and add in all of my seasoning so I’m using cumin smoked paprika a little bit of chili powder dried oregano garlic and onion powder so after I’m done giving the mixture a quick stir then I’ll go ahead

And add in all of my DIC sweet potatoes followed by all of my beans and my crushed tomatoes and I am using one can of black beans and one can of red kidney beans for this recipe but I love variation so feel free to mix and match

Whatever kind of beans you like it’s totally up to you finally I’m going to add in some vegetable stock and then I’ll give this mixture one final stir then I’m going to cover this and allow the chili to simmer for about 30 to 45 minutes after about 30 to 45 minutes the

Chili should be nice and thick and the potatoes cooked bonus points here if you want to cool this down and refrigerate it to allow the flavors to develop even more before you enjoy it I am not a vegetarian by any stretch here but I do enjoy a really good
