Stuffed Grapes Leaves (Warak Bil Eneb)
This is a vegan version of my favorite way to eat stuffed grapes leaves.
Ingredients:
1 jar grape’s leaves (1lbs) drained, rinsed, with the ends trimmed.
1 can garbanzo beans, drained, and passed through the food processor to break up into small pieces. This could also be done with the potato masher or a fork.
2 3/4 cups short, grain, rice, rinsed.
3 Tbs vegan or plant based Ghee, divided.
1 Tbs safflower, crushed between the palms.
1 tsp ground turmeric
1/2 tsp ground black pepper
1 tsp ground 7 spice mixture
2 tsp sea salt
1 cup lemon juice
1 Tbs salt for the sauce
3 sliced tomatoes
2 heads of garlic, peeled
2 cups plant-based yogurt
1/2 cup tahini
1/2 cup water
1/2 tsp salt
1 tsp crushed garlic cloves
3 Tbs fresh dill leaves, chopped.

Directions:
Mix the rice with the garbanzo beans, the spices, 2 tbs of the ghee, and 2 tsp of salt.
Stuff the grape leaves by adding half a teaspoon into each leaf, folding the edges, then rolling the sides into a cigarette shape.
Greece the bottom of the pan with the reserved ghee . Top with the sliced tomatoes, then add the stuffed grape leaves, alternating layers with the peeled garlic cloves. Weight the stuffed grape leaves with the heavy heat, proof plate or lid, cover with water add the reserved 1 Tbs salt. Cover and cook on high heat until it begins to boil, lower the heat to medium low and cook covered from 2 to 4 hours depending on the grape leaves variety. The stuffed grape leaves should be soft and easy to cut with a spoon or a fork. Add the lemon juice and continue to cook for another 10 minutes, adjust the salt to your liking.
To make the yogurt tahini sauce, mix with the garlic and the salt, add the water and mix. Adjust the salt to your liking. to serve, drain the grape leaves from the cooking sauce. Serve the grape leaves with freshly heated pita bread, the yogurt sauce, and some of the grape leaves cooking sauce.
