Next time, I’m probably going to slightly increase the temperature on the sous vide to better render the fat, get a little more generous with the salt/pepper, and make sure to sear the sides. Fries were a Joshua Weissman recipe with béarnaise on the side. Bluegrass bourbon pomegranate peach smash to drink.

    Almost forgot—additional side included a grilled peach, grilled halloumi, toasted pecan and arugula salad.
