Hi welcome to Chris cope for you too today I’m going to be doing a side dish called skillet corn now there are several different ways to make this you can make this with bell peppers you can make this with just the regular corn which is the way I’m doing it you can

Make it with bacon there’s a lot of different ways you can make it and I’ll probably show you some of those ways but today I’m just going to make it using corn now for more of a southern flavor this dish is best served with fresh corn

But if you don’t have fresh corn then it’s better to go with the kernel corn that’s frozen and that will give you more of a southern taste but if you don’t go with that then you can always go with what I’m using today and that’s

Going to be just canned corn so for the ingredients you’re gonna need you’re gonna need canned corn some water milk butter flour sugar salt and pepper that’s all you’re gonna need to make this delicious side dish so I’m gonna go away and just meet you at the stove

Right okay now I’m at the stove and in here I’ve already added my butter and as you can see it’s starting to sizzle up so to the butter I’m gonna go ahead and add my corn to that now I make you know I’m making a lot more than you would

Make so when I put the ingredients I’ll put your ingredients for two cans of corn and I’m using six cans so man it’s gonna be just a little bit more than yours so what you want to do is you want to put all your corn in the skillet and

If you notice my coin is drained my cans have been drained and to that you want to add your water your sugar your salt and your pepper so the only thing that you will not be adding to the says you won’t add the flour at this

Point and you won’t add the milk at this point so you’re going to allow this to cook over medium heat for 15 minutes and that’s just until all of your water can cook out of it that you’ve added and then once your water cook out then

You’re going to go ahead and add your flour mixture now what I’m going to do is I’m gonna cover this with a chopper and I’m gonna allow it to cook which is going to take about 15 minutes until all of my water has actually gonna go ahead

And add some salt to that and I’m really not a big fan of a lot of pepper so I’m gonna stir this up and I’m gonna cover this and I’m gonna allow this to cook until all of my water has disintegrated once it has disintegrated I’m gonna

Bring you back now while I have you I’m gonna show you how I’m gonna do this I’m just gonna this is my milk put my milk in the container and I’m going to add flour to that and the reason why I always do that early it’s because I want

The flour to have a chance to dissolve so my flour is going to dissolve and then I pour it up when we come back and I’ll probably add just a little bit more that butter that I have okay so I’ll bring you back I’m gonna cover this and I’ll bring you back once

All this water is out okay now I’m back and it’s been almost 15 minutes so and as you can see that my water is almost out so it’s at this point that I’m gonna go ahead and add just a little bit more butter down in this and I have just

Enough water where it won’t stick and this is this is really a good amount of water for me to go ahead and add the flour mixture that I have sitting off here to the side now even though I only start this one time when it was cooking for the 15 minutes

So now what I’m going to do is I’m gonna add my flour mixture to this and I’m gonna stir this a little bit more because now what I wanted to do is to thicken now this is a good recipe and I think that if you try that you’re really going to enjoy it

And see now didn’t take a long time for this to start to thicken up so now what I want it to do is to have that thick kind of consistency see how this is so now I’m gonna let this cook for like another 5-6 minutes now at this point if

You didn’t have enough water in there and you needed just a little bit more water then you can go ahead and add it if you just want a little bit more cooking time but keep in mind that the 15 minutes that your corn canned corn

Don’t take that long to cook now keep in mind at the 15 minutes that your corn was actually cooking that cooked your corn so the only thing that you’re doing now is just making like a thickening really kind of like a a sauce to it so a

Thickening sauce but what I’m going to do is I’m gonna add just a little bit of water just a little bit not a lot because I will just a little bit more cooking time so what I’m gonna do is it only take like like I said 15 20 minutes for cooks

Before corner cook tops if you’re gonna be cooking canned corn so see how this is now and this is good so I’m gonna turn this on low and I’m gonna let this cook for like five minutes and I bring you back at the end of that process but

I will continue to stir so it’s 5 minutes of cooking on low and then your corn is done I’ll be right back ok now I’m back and it’s been about 5 minutes and this corn is ready okay and that’s what it looks like now I’m going

To scrape this but when you be just before it stick you’ll hear that little fry sound at the bottom that’s when you know that your corn is really good listen hurt that hurt that see just before it begins to stick okay then it’s done now this point is really good I

Think that if you try it you are truly going to enjoy it I’m gonna put just a little bit more butter in here you don’t have to do that you don’t have to do that I’m just doing that because I had to butter sitting over there and I just

Want to put it in like I said this is really good if you’re using corn on the cob if you don’t have corn on the cob and then you’re using frozen corn you’ll get more of that southern taste because that corner hasn’t been canned and it’s not it doesn’t have that real sweet

Taste to it it has more of that cobby type taste to it but if you don’t have it do it the way I did it I did it with just can corn as you can see you don’t have a lot of sauce but you have enough

Sauce to make it look kind of like a creamed corn this is really really good I’m not gonna dish this up because I’m serving this with pork chops and my pork chops are not ready yet so I just want to bring you something different that you could

  2. Thank you! I have been searching for someone who cooked fried corn like my momma did. She fried fresh corn off the cob and it looked just like yours. I have just watched 3 other videos before yours and they were all creamed corn consistency, too much sauce to corn. Yours looks perfect! When you said something about hearing the sizzle when you scrap the corn back that you know the corn is done, I was so excited because your corn was perfection! I know it had to taste so similar to my momma's. If you had actually cut that corn and scraped the cob, I know the flavor would be just like hers, heavenly! I imagine even your canned corn one was near perfect, too. I am going to try and make this now that I watched you. I might give it a try with frozen corn too, maybe even scrape some off the cob when the corn comes in. 🙂 I just subscribed.
