Today’s recipe Chilli Cheese Fries! The combination of triple cooked chips, gooey cheese and a kick of spicy chilli is simply irresistible!

Ingredients:
For the Triple Cooked Chips:
• 6 russet potatoes
• Vegetable oil for frying (enough for deep frying)

For the Chili:
• 500 grams (1 pound) lean ground beef
• 1 Large brown onion
• 4 cloves garlic
• 1 teaspoon chili powder
• 1 teaspoon cumin
• 2 tbsp tomato paste
• 500ml/17 oz Beef stock
• 454 grams (16 ounces) red kidney beans, drained

For the Cheese Sauce:
• 30 grams/1 oz butter
• 30 grams/1 oz all-purpose flour
• 400ml/13.5 oz
• 222 grams 8 oz American cheese

Hi everyone and welcome to the channel today we’re working on comfort food at its best chili cheese fries with homemade triple cooked chips this one takes a little time but it’s worth every minute if you want to start earlier in the day as the chips take a little time

To cool between steps but if you like to skip that and new store bought chips this is one you can bake any day of the week as always a full ingredients list will be at the end of the video they’ll also be listed in the description below

So we’ll start this one off with the triple cooked chips there a few steps involved but it’s totally worth the effort we’re using rusted potatoes I think it’s always hard to tell but any kind of chip potato will work for me they always seem to be only available

Brushed but it’s no big deal as we’ll be peeling them today so we start off by peeling our potatoes and then cutting them down into chips I like using a thicker almost wedge as they’ll act like a spoon and help us shovel all that delicious chili and cheese sauce into our

Mouths after getting them all cut we need to get them into a sauce B filled with water and season really well with salt we need to bring these ones to a simmer and cook until just tender it’s really important that we don’t overcook them at this stage not just that they’ll

Be mushy but they’ll also take on some excess water and make it almost impossible to get them crisp later on with our chips slightly cooked we need to get these ones chilled down to quite cold I’m going to pop them into the freezer to do this a bit

Quicker now that these are nice and cold we can do our second cook of the chips we need to bring our oil up to 140° C or 280° F with our oil up to Temp I’ll add the chips in small batches and cook them until you can see an outside shell

Starting to form on the outside of the potatoes you’ll be able to see a slight opak andess form and that’s how you know this step is done with our first fry done we’ll chill these down again and get to work on the chili if you’re going to prepare these

Ahead of time this is where you would freeze them down simply leave them on the tray to freeze and then transfer them to a freezer bag and when you’re ready simply cook them for Frozen with our prep out on our chips let’s get to work on the chili now I’m definitely no

Chili expert but this is a consistent recipe that’s really reliable if you have your own chili recipe you could definitely use that instead but for mine we’ll start by finally chopping one large brown onion and finally chopping four cloves of fresh garlic And for our dry spases we’ll need 1 teaspoon of chili powder and 1 teaspoon of ground cumin with everything chopped and ready to go I’ll get my onions into the Sauce followed by our garlic and sweat these down together until they’re nice and soft now that our onion and garlic has done its thing we’ll add in our beef mints turn up the heat to medium high and constantly stir to break up any lumps we will keep cooking this one

Until all the water that comes out of your mince is gone and is nicely browned next end is the tomato paste we’ll cook this one for a few minutes to get rid of any bitter raw tomato paste flavor with the paste cooked next is our crushed tomato and 500 M beef

Stock followed by our dry spices and red kidney beans pop on a lid and leave this one to simmer for about 30 minutes we have a few processes going on here but while our chips are cooling and the chili is simmering away we can knock out a quick

Cheese sauce we’ll start by melting 30 G of unsalted butter in a saucepan over medium heat and then we can go in with 30 G of plain flour we want this one to cook constantly stirring for a minute or so you can tell it’s ready when it comes

Together into a smooth paste and Bubbles nice and evenly now we can add our milk pour 400 mil milk into your R now you should probably use a whisk here but I don’t want to scratch my sauce pin but you can get a nice white sauce together by stirring constantly as it

Comes up to a slow boil and simmer over low heat for a few minutes once up to temperature with our white sauce made pop in your American cheese weirdly it’s quite hard for me to get where I live but it’s more commonly found in american cheese slot slices so all I’ve done here

Is shreded a few slices with a knife and I’m sure it’ll work just fine give a good stir to get your cheese to melt and our cheese sauce is ready time to finish it all off heat your frying oil to 180° C or 350° fhe and get your chips

In these don’t take long if using from the fridge they will start to go golden brown quite quickly and have a crunchy layer you can almost see fry these in small batches until you have enough to feed your design side crowd then add our generous spoonfuls of chili these chips

Are so crunchy that they’ll take quite some time to soften up so you can pile them pretty high with chili they won’t let you down finally the cheese sauce adjust the consistency with a little more milk if required and drizzle over as much or as little as you
