Eggplant Bharta is a delicious Indian dish made with roasted eggplant and spices. It’s a flavorful and smoky dish that is often enjoyed with Indian bread like roti or naan. Here’s a simple recipe for Eggplant Bharta:

Ingredients:

1 large eggplant (brinjal)
1 large onion, finely chopped
2 tomatoes, finely chopped
2 green chilies, chopped (adjust to taste)
1 tablespoon ginger-garlic paste
1 teaspoon cumin seeds
1 teaspoon mustard seeds
1/2 teaspoon turmeric powder
1 teaspoon red chili powder (adjust to taste)
1 teaspoon coriander powder
1/2 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnish
2 tablespoons oil
Instructions:

Roasting the Eggplant:

Pierce the eggplant with a fork in several places.
Roast the eggplant directly over a gas flame or on a grill until the skin is charred and the flesh is soft. You can also roast it in the oven at 400°F (200°C) for about 30-40 minutes.
Peeling and Mashing:

Once the eggplant is roasted, let it cool slightly. Peel off the charred skin and mash the flesh with a fork or potato masher. Ensure that there are no large chunks.
Tempering:

In a pan, heat oil over medium heat. Add cumin seeds and mustard seeds. Let them splutter.
Add chopped onions and sauté until they become translucent.
Adding Spices:

Add ginger-garlic paste and chopped green chilies. Sauté for a minute until the raw smell disappears.
Add turmeric powder, red chili powder, coriander powder, and salt. Mix well.
Adding Tomatoes:

Add chopped tomatoes and cook until they become soft and the oil starts to separate from the masala.
Incorporating Eggplant:

Add the mashed roasted eggplant to the pan. Mix everything well and cook for 5-7 minutes, allowing the flavors to meld.
Finishing Touch:

Add garam masala and adjust salt and spice levels according to your taste. Cook for an additional 2-3 minutes.
Garnish and Serve:

Garnish with fresh coriander leaves.
