An easy way to have a cherry cheesecake in a cup.

Ingredients:
3/4 Cup Graham Cracker Crumbs
2 Tablespoons Sugar
2 Tablespoons Melted Butter
8 oz. Cream Cheese, Softened
14 oz. Sweetened Condensed Milk
2 Teaspoons Vanilla Extract
1/3 Cup Lemon Juice
21 oz. Cherry Pie Filling/Topping

Directions:
1. In a small bowl, combine the graham cracker crumbs, sugar, and butter; mixing until well combined.
2. In a mixing bowl, beat cream cheese until smooth. Gradually add condensed milk until blended. Beat in lemon juice and vanilla.
3. In a dessert glass, spoon about 3 rounded tablespoons of the crumbs. Spoon about 1/4 to 1/2 cup of the cream cheese mixture into each cup. Top with 4 to 5 tablespoons of the cherry pie filling.

| Makes About 4-5 Servings.

Note: If you are making small servings (1/4 cup of cheesecake mixture & 1/4 cup of cherry) you can make about 8 servings. The glasses I used are bigger so I filled them up with 1/2 cup of cheesecake and cherry topping, giving me about 4-5 servings.
