Here’s a Valentine’s appetizer idea! I’m craving this! It’s my version of Antipasto salad. Here’s what I used:

Hard Salami, Turkey Pepperoni, fresh mushrooms, broccoli florets, red onion, bell peppers, shredded carrots, cucumbers, celery, marinated artichoke hearts, olives, salad tomatoes, pickles, minced garlic, Parmesan cheese, and Italian dressing.

Other meat suggestions: cooked roast beef, chicken, ham or bacon, boiled eggs

[Applause] [Applause] W Well hey y’all and welcome to the hillbilly chicken ranch I am Susan your Hostess today I’m thinking forward to Valentine’s Day a day of of love and sharing and I want to make a recipe for you that I think that your family will like it’s actually easier than it sounds

It is an ant Pasto salad from Italy but my version of it you can use any kind of vegetables that you like in it you can use um roasted roasted uh peppers in it if you want to you can use fresh peppers in it if you want to there’s so many

Ways to make this you can put fruits in it just a number of things and I’m just going to show you the ingredients that I have pulled today I have pulled pepperoni and hard salami you can use just about any kind of meat that you want it’s usually got

Some kind of ham based meat in it but you can you certainly use chicken and roast beef and any number of things I’ve had it many many different ways over the years it’s always delicious it always has some mushrooms in it unless you don’t like mushrooms I picked up some broccoli

Fettes uh I wanted to get the cauliflower too but they didn’t have any cauliflower at that time in the store um some baby Tomatoes now if you don’t have baby tomatoes you can use sundried Tomatoes you can use uh slicing tomatoes it’s totally your choice I pulled a red onion out of our

Pantry Red Onion is indicative to this salad I pull some cucumbers to slice up in the air I also am going to put some celery in mine I like C celery I’ve got a fresh carrot to shred mine is going to have some Arch choke hearts that have been

Marinated and I couldn’t find the black olives but I did find the Spanish olives so we’re going to have some Spanish olives in this I’m going to have some Parmesan cheese in it uh other cheeses that you can put in here are mozzarella romano and provolone I don’t particularly like putting

The cheese the bite-sized cheeses in this because it’s a salad until I’m ready to serve it and then it’s usually an oil and vinegar base but I’m going to use some Italian dressing in mine and I’ve got some bell peppers Frozen the freezer I may throw a little bit of that in there

And just make a really nice salad that we can eat on throughout the week but this is a an appetizer you can do an anti pasty uh board like a Cherie board board and you can add your fruits and your cheeses and everything that you want to

Put in this you can even add egg in this if you want egg in it it’s just a wonderful wonderful thing to have on hand as a salad throughout the week okay I have deined my celery with this this is a potato peeler I’ve got my carrot prepped I’ve

Got my mushrooms washed off my cucumbers are washed off I’ve got my bell pepper coming to room temperature here and we’re going to get started and I’m going to start first with the carrot and get this grated so I’m just going to do a little grate by hand

So I’ve graded almost a whole carrot uh not quite a full carrot I’m just going to go ahead and get that in my Bowl I’ve got this little slicer I’m going to use on these cucumbers I’m going to cut off the ends that’ll give them a nice little scallop in the in the bowl so I’m doing up two of these small cucumbers um you can use as many or as

Few as you want to use or om them if you don’t like cucumber so that’s in the bowl I’m going to go ahead and throw this bell pepper in here since it’s already partially defrosted and get it in the bowl the next thing I’m going to do is I’m going to take my

Mushrooms and I’m just going to slice them now we like mushrooms so we’re going to use a lot of mushrooms we’ll probably use the whole container grab some more mushrooms now there’s a big contention about washing mushrooms I like them washed I don’t like eating dirt

So I wash my mushrooms I usually uh if they look like they’ve been sitting on the shelf a while I’ll cut the ends off of them like this one’s got a little brown on the end of it I’ll just cut that off but I like to have the stems and

All and because you’re getting all that good nutrition from your mushrooms we did take a little shopping trip to Aldi’s I was in price shock again every time I walk into a grocery store I’m in price shock the mushrooms do not get fed to the chickens I’ve got three more mushrooms to

Do I’m going to go ahead and grab me some of these cherry tomato we’re going to get them sliced in half throw them in there now you could slice them quarters or halves or however you want to slice them I’m just slicing them lengthwise like

That and that’ll add a lot of color to your antipasto salad I’ve got my red onion here I’m going to go ahead and get that ready to go I don’t feed the onion to my uh chickens either but all these end pieces will go

Into a um scrap bag I have in my freezer for vegetable broth so I’m just going to slice this really thin and probably only use half of a onion in this size bowl and the other half I’ll use in something else going to rinse this broccoli off we’re

Going to probably use just one head of this and so each flet has a light to it so I’m just going to chop this up into bite-sized pieces and we’ll throw that into our bow and that broccoli stem can go into my bag for my vegetable broth that

Okay I’ve got my broccoli chopped up and my bowl is very very full at this point I get rid of my cutting board wash my hands okay I forgot about my celery so I’m going to go ahead and get these ends off of course those will go into the bag for the vegetable

Broth so now I’ve got my celery all sliced up and I’m still finding some strings I want to get rid of those now I can get rid of my cutting board I’ve got art choke Hearts now it’s totally up to you whether you drain the liquid off and put

Them in here or if you just want to uh go ahead and just dump them into the jar I’m going to cut these up a little bit or maybe not maybe I’ll just leave them like they are so there’s not a lot of aroke in here but you can actually put more in

There if you want and I’m going to get some olives I’m just going to slice those in half not a lot of Olives but a few and we save our jars I pulled out some of my pickles let me get a fork so I can get them out of the

Jar and I’m just going to cut these pickles up into bit-sized pieces and that way they’ll be throughout the salad these are my old South lime pickles they’re very crisp and very delicious they’re kind of a can to a bread and butter pickle so I’m not adding a lot of that

In here um you could add relish if you wanted to put Relish in this instead of pickles any number of ingredients this has this could be a meal in itself I mean it’s got a lot of good stuff in there and I got parmesan cheese I’m just going to sprinkle some over the

Top probably about a half a cup I’ve got to get my meat on here and my dressing so let me get that ready to go okay I’ve got some hard slimy I’ve actually washed my board and I’m going to use it to slice this up and it just depends on how much you

Want in there 3 to 6 oz is good amount of meat to put into it I do believe this is an 8 O package and so I’m just going to go down the middle of this I’m going to stack them and I’m just going to cut them into

Chunks and then we can just sprinkle them over our salad and we’re going to mix all this in a moment I’m might have to get a bigger bowl out to get it all mixed up okay I’ve got some turkey pepperoni I’m going to take some of this

And I’m just going to lay it over the [Applause] top they even have many um things that you could put on here many cuts of meat that you could uh purchase already done up and it just saves you so much time if you decide to do that and so I’m just

Going to add some pepperoni to this I may come back in and add some doubled eggs to it I don’t know yet I don’t have any eggs prepared today so it’s not going in right now and I’ve got all my ingredients except for my dressing on here I’m going

To go find a bigger bowl to mix this in and get it transferred back into the bowl hey I found a bigger bowl I’m just going to dump everything into this bowl it’s going to go right back into this this little glass bowl but I did that so I that I could

Mix this real quick let me get the dressing on it so about a half cup to a cup depending on how much dressing you want on your anti Pasto salad and you’re going to allow this to sit for a little while before you serve

It uh I would make this a day in advance and let it sit in the refrigerator covered overnight and then you could serve this throughout the week and it I promise you this is a delicious delicious just salad so we’re going to get this back into the glass

Bowl the idea is to let allow all those flavors to marinade together I did go back in and I did chop up that uh artichoke hearts just was not comfortable with it in big chunks and that way it’s little bites and this is going to be oh so Delicious so there is the antios salad doesn’t that look scrumptious y’all I added a little bit of uh minced garlic to this and this is delicious and you can already smell the flavors melding together can’t wait to dig into it so let’s just take a little

Taste so I’ve got a little bit of stuff on the Fork that’s the way I remembered it and it is so so delicious it’s going to be a great appetizer for your meals it’s a salad that I make without lettuce because I have a blood clotting Disorder so I avoid a lot of vitamin K foods but you can put Roma lettuce in

Here if you want um there’s just a number of things that you could do with this salad to make it your own that’s another reason I like it so much so make you some antap pasta salad today thank you friends for watching and may you be Blessed [Applause]
