Super easy & delish dinner salad

1 lb thin slices chicken breasts
3 Tbs olive oil
¼ c honey
¼ dijon mustard
½ tsp pepper
1 tsp salt
3 cloves garlic, minced

Set the chicken aside and mix all remaining ingredients together until well blended. Pour into your container of choice* and add the chicken. Marinate 4 hours or overnight.

Grill until done, basting with leftover marinade.

Cut chicken into strips and top your favorite salad.

I’m partial to spring mix lettuces, cucumber, cherry tomatoes, red onions, avocado, and hard boiled eggs.

* Ziplock bags. Hear me out.

1. You can actually skip the bowl and just throw all the marinade ingredients into the bag and squish it around really good. Less cleanup? I think yes.

2. They take up less space in the fridge. We live in a camper and have a super tiny fridge. So that’s kind of important for us.

3. You can actually make this up and then put it in the freezer. As it thaws, the chicken marinates. Look at you making a healthy, classy meal on a weeknight. No one needs to know you cheated and made it a month ago while you were wearing pajamas and drinking wine.
