I chose to make fritters lemon cream but of course as always you can personalize with the fruits of your choice in a salad bowl add 3 tablespoons of sugar add 3 tablespoons of flour this ingredient is completely optional

But I like to add a pinch of turmeric so to give a little more color add 1 large egg yolk and mix finally add the mixture of milk + lemon zest (in two or three batches) and mix at the same time

Pour again into the pan and cook over medium heat always stirring until the cream thickens then let it cool in the fridge for about 30-45 minutes; 1 hour is even better! place it in a piping bag and stuff your choux pastry with lemon cream

Then place a candied morello cherry in the center of the cream These donuts without frying, with this lemon pastry cream and this cherry on the donut and perfect for a dessert light, creamy and delicious it is a typically Italian recipe which comes from Naples

And which is simply called: zeppole di san giuseppe, which simply means the donuts of St Joseph since it is a recipe that we prepare March 19, which is in Italy, the Feast of Saint Joseph and also Father’s Day, it’s a very beautiful tradition
