Large saucepan or Dutch oven
Wooden spoon or spatula

Ingredients for A Bacon and Sundried Tomato Risotto

For this recipe, you will need
1.5 cups arborio rice,
4 slices of cooked bacon,
1/2 a medium onion,
1 clove of garlic,
2 tablespoons of butter,
2 tablespoons of olive oil,
6-8 sundried tomatoes,
4 cups of vegetable broth,
1/3 cup of frozen peas,
1/2 cup of grated parmesan cheese.

How to Make A Bacon and Sundried Tomato Risotto

Chop the onions, sundried tomatoes, garlic, and cooked bacon and set aside.
Heat the broth in a saucepan and keep it warm over low heat. Alternatively, you can heat it in the microwave so that it is warm when you put it in the pot.
In a large saucepan or Dutch oven, heat some olive oil and butter over medium-high heat. Add the chopped onion, and sauté until they become translucent and fragrant.
Then, add the bacon and cook for 1-2 minutes; add the sundried tomatoes and garlic and cook for 2-3 minutes.
Then, add the Arborio rice to the saucepan and stir it to coat it with mixture. Cook for a couple of minutes until the rice grains become slightly toasted.
Add the vegetable broth to the pot and bring to a boil. Once it’s boiling, reduce the heat to medium-low and cover for 10 minutes.
After 10 minutes, gently stir, and cover for another 10 minutes.
While the rice is cooking, grate the parmesan cheese.
After 10 minutes, uncover and taste the rice for doneness. If it’s soft and still holds its shape, it’s ready to stir in the cheese.
Add the cheese and gently fold it in until it is well mixed. Then, gently stir in the frozen peas.
Remove the risotto from the heat and let it rest for a 8-10 minutes. This allows the flavors to meld together.
