tuesday dinner: brussel sprout salad

Ingredients – 4 cups shredded brussel sprouts – 2 tbs olive oil – 1 tb garlic powder – 1 big pinch sea salt – 1 can rinsed and drained white beans – 1 can rinsed and drained chickpeas – 2 tbs olive oil – 1 tbs smoked paprika – 1 tbs cumin – 1 tsp oregano – 1 red onion – 1 bell pepper – 1/2 a cup of Kalamata olives – 1 container yellow cherry tomatoes – 1 bunch of dill – 1/2 a bunch of parsley – 1/4 cup olive oil – The juice of 2 lemons – 2 tsp oregano – 2 tbs red wine vinegar – One block of feta cheese Instructions 1. Shred your sprouts using a mandolin or slice them thinly. Lay the shredded brussel sprouts on a baking sheet and drizzle with 2 tbs olive oil. Season with garlic powder and sea salt and massage the seasoning and oil into the shredded brussel sprouts. Spread them out on the tray evenly 2. Spread your white beans and chickpeas out on another baking sheet and cover in 2 tbs olive oil, season with the paprika, oregano, and cumin. Rub the seasoning and oil into the beans 3. Roast the brussel sprouts and beans in the oven at 400 for 15-20 minutes till they’re crispy at the edges 4. Dice your red onion, chop your Kalamata olives, core and dice your bell pepper, mince your dill and parsley and add them to a big salad bowl with the beans and Brussels. 5. Add the olive oil, lemon juice, oregano, and red wine vinegar. Toss your salad till all of the dressing is coated. 6. Crumble your feta cheese and toss gently. 7. Serve and enjoy! #salad #mediterraneanfood

Turn on the light so they can see you oh it was me just kidding it’s hold on sorry I’m washing my beans we’re making Violet witch’s Brussels I would call it like a brussels sprout salad so it’s Brussels sprout beans chickpeas camama olives cherry tomatoes and feta bunch of seasoning

It’s delicious we had last week so we thought we would make it ourselves this week so that’s what we’re doing and I’m on bean Duty it’s an easy meal that you can just pop into the oven and then sit back down well Foods has these prepackaged sliced brussels sprouts these shaved

Brussels sprouts they’ll save you so much time so that’s our little trick I don’t know if people know that trer Joe’s does too yeah but there’s comes in like a salad pack does it not I think they just they have the Taylor Farms one and you always want to get more

Brussels sprouts than you think because they shrink so much in the oven but I think I might need to do two sheet pans I don’t think it does one red onion okay so we should one bell pepper all roasted no but I think could do not

Roast the rad pepper last time or did we not put it in it no we did it was yellow and it was fresh but what about the onion we like to roast our onion yeah that’s what I that’s what I was saying you said bell pepper though garlic powder and sea salt

Reason why we’re roasting the onion is we don’t like raw onion okay I’m plopping the putting these in the oven until they’re kind of Brownish found it sitting out here this morning oh maybe last my mom did a shallot instead I think she did she’s vomitted it last time on your beans did you put all those seasonings no Emily why would they need seasoning it’s a a recipe you follow it

For a reason I like to do my own thing she just put straight me in the air fryer I did avocado oil and seasoning AK salt that’s all it needs paprika oregano and cumin right oregano one tspoon of paprika one tbspoon of cumin one te teaspoon of oregano
