Ingredients for making classic guacamole:
1 medium tomato
1 medium jalapeno pepper
2 big avocados
Salt & pepper
2 tbs olive oil
1 lime, juice
1/2 onion
1 garlic clove
1/4 cup coriander

Instructions for making homemade guacamole:
– Start by slicing a medium tomato in half then carefully cutting out the pith
– Continue cutting the tomato into quarters then you can easily slice along the line between the flesh and the seeds to separate them
– Discard the seeds because the liquid can make your guacamole too runny then thinly slice the tomato flesh into strips, finely dice those strips and set aside
– Next prepare your jalapeño pepper by first slicing it in half lengthwise then cutting off the stem and slicing into quarters
– The spiciest part of the pepper is the seeds so this next part is up to you and your spice preferences
– If you like it less spicy, carefully slice along the line between the seeds and the flesh and discard the seeds
– If you like it spicy, leave them in and simple slice the pepper into thin strips then into a fine dice
– Set this aside and now it’s time to start assembling the guacamole
– First add the flesh from 2 large ripe avocados to a large bowl
– Season with a few pinches of salt and pepper followed by a drizzle of olive oil and the juice of 1 whole lime
– A lot of people have specific preferences for guacamole so feel free to adjust these quantities based on your taste
– Mash the avocados with a potato masher of even just a fork until its creamy but not completely smooth then add your diced tomato, half an onion, finely diced, as much or as little of your diced jalapeño, depending on your spice tolerance, one glove of minced garlic, and 1/4 cup of finely chopped cilantro
– Now all you need to do is mix it all together, taste it and adjust your seasonings then serve with your favorite tortilla chips and enjoy
