Michelin star Simon Hulstone creates three dishes from his award winning restaurant the Elephant in Torquay, where his food has become more simple and more in tune with the seasons with much of his produce coming from the farm.

Watch as Simon creates a dish of tartare of scallop and Exmoor caviar , green tomato and sorrel granite. This is followed by a main course of creedy carver duck , crown prince pumpkin purée, red wine glazed salsify. Simon finishes with another main course dish of wild garlic, poached Skrei cheeks , burnt cucumber , squid crisp .

Uh so the first dish I’m going to be doing is I’m going to do sish of scallops local scallops and I’m going to be serving it with green tomato and soral granite with a little bit of exal ciar so I got fantastic bricks and scallops which I’m going to be serving

Raw so I’m just going to dice them uh just season them up and then I’m serving some uh egm caviar green tomato juice uh Apple Sorel and then we freeze it down turn into a granite so sered over the top of the scallops to nice and fresh uh

Keep the chill factor down on it and then just some fresh soril with it as well and then it’s very simple nice light star to start some meal off really Well
