    Why go to all the trouble to beautifully cut and arrange the fish, only to hide it under a bloody mess of mashed fig?

    Beautiful cut work, to start. The last picture is the prettiest, is your problem. The fig mash, is what I’d change, personally – cut em in 1/6ths and maybe marinate em in like a ponzu++ vibe? There’s a ton a good here, but yea I spent a good minute trying to figure out what the fig was.

    Is there a reason you left the bloodline in? I have never seen that usually we clean it.

    I would put the mash into a little bowl in the middle to show your beautiful work underneath.
