Ginger Sesame Pasta Salad 🍝🥗
This recipe is one of my all-time favorites! I love how it is colorful, flavorful, and refreshing all at the same time. I enjoy eating it slightly chilled, which means I do not need to find a microwave to heat it up. The crispy tofu adds protein and makes it more filling, and the sauce brings the entire dish together. Ingredients:
-250g (10oz.) of pasta of your choice
-half of a red onion, thinly sliced
-2 medium-sized bell peppers, thinly sliced
-1 block extra firm tofu
-3 tbs cornstarch
-2 tbs sesame oil
-2 tbs soy sauce
-1 tsp black pepper
-neutral or olive oil for cooking
-green onion and sesame seed for garnish
Sauce:
-1/3 cup soy sauce
-2 tbs sesame oil
-2 tbs honey
-2 tbs brown sugar
-2 tsp minced ginger
-1 tsp red chili flakes
-cornstarch slurry (1 tsp cornstarch mixed with 1 tsp water)
Instructions:
-cook pasta to al dente according to package instructions, strain out water, lightly oil to prevent sticking, and set aside
-add sauce ingredients into small bowl and mix together
-set a small saucepan on low heat and add sauce ingredients
-bring to a simmer and allow to reduce for 5 minutes; keep a close eye on it and mix every minute to prevent from boiling over
-add in cornstarch slurry and mix well; simmer for 2-3 minutes and remove from heat when sauce is thick enough to coat the back of a spoon
-press tofu and break into small pieces; mix in a bowl with sesame oil, soy sauce, black pepper, and cornstarch
-set a nonstick pan on high heat; add 3 tbs oil
-sear tofu for 3-4 minutes per side until brown and crispy
-in a large bowl add pasta, sliced onion and peppers, sauce, and tofu; mix together well
-plate and garnish with green onion and sesame seed
-enjoy!
