Need a romantic Valentine’s Day dinner recipe? Make this Vegan Penne a la Vodka for someone special and they’ll surely fall in love (and it’s totally acceptable to make it for yourself)!
This pasta is coated pink-ish sauce, made with a combination of tomatoes and non-dairy cream, as well as a touch of vodka (don’t worry though, most of the alcohol will evaporate as it cooks). It also tastes nice and cheesy with the vegan parmesan we add. Serve it with vegan chicken strips and sautéed broccolini for a well-rounded date night dinner!

Vegan Penne a la Vodka Ingredients:
2-3 Tbsp. extra virgin olive oil
1/2 yellow onion, diced
2 cloves garlic, minced or pressed
1 28-oz can whole peeled tomatoes
100 mL vodka (slightly under 1/2 cup)
2-3 drops liquid smoke (optional)
salt & pepper, to taste
5-6 fresh basil leaves, plus more for garnish
7 oz. oat cream*
3 oz. grated vegan parmesan (I used the Violife brand)
1 lb. penne pasta, cooked in salted water

*Notes: You could use coconut cream instead of oat cream, though the flavor will be a little different.

Serving suggestions: serve with vegan “grilled” chicken strips and sautéed broccolini.

Love is in the air and I can’t think of a better Valentine’s Day dish than this vegan pan vodka pasta the sauce is pink because it’s got Tomatoes cream and a little bit of vodka but don’t worry you won’t taste the alcohol if you’re new

Here my name is Linda and this is vegan petite I’ll be sharing a Valentine’s Day dessert recipe next week so go ahead and subscribe but for now let’s get into the pasta chop half a yellow Onion heat up a large Skillet over medium heat and add enough olive oil to cover the bottom of the skillet now add in those finely diced onions cook the onions until they become softened but not browned once the onions start to soften up go ahead and turn the heat down to

Medium low now add two cloves of crushed garlic stir that until the garlic becomes fragrant and be careful not to let it burn now add one large can of whole peeled Tomatoes along with the juice of it and be careful not to Splash gently use your wooden spoon to crush the tomatoes and if there’s still large chunks left you can even use a Masher just be gentle again if you have a glass stove top be very careful with this don’t apply too much pressure all right now you’re going to need 100 ml of

Vodka it’s a little bit less than half a cup and I just picked out this one it’s made in San Francisco add that to your sauce once the sauce comes to a light bubble go ahead and lower the heat to medium low and just let that continue to

Simmer until um most of the liquid is reduced and that will allow the alcohol to burn off as well and then back here I’ve got my pot of water getting ready to boil to cook our pasta you’ll also want to season the sauce with salt and pepper at this stage and again don’t

Don’t rush it just let it do its thing to accompany our dish I’m going to be preparing some broccolini as well as some vegan chicken strips so let’s start by sautéing these out heat up a large Skillet over medium heat and add a little bit of olive oil now add the chicken strips

Cook those according to the package directions these Gardine ones only take about 7 to 9 minutes and you can find these in most grocery stores in the freezer section now I’ve got a secret ingredient liquid smoke this is because traditional pen alav vodka has Panetta which is kind of like an Italian bacon

But instead of using the bacon we’re just going to use a couple drops of this really not a lot just two drops one and two that’s it that’s going to impart some Smoky flavor into our sauce but not so overpowering that you can really tell

What it is our pasta water is boiling so we’re going to go ahead and generously season that with a tablespoon of sea salt and now I’m using this pen rate let’s go ahead and cook it once the chicken strips are getting Brown around the edges and are softer

You can use your spoon to cut them in half just so they’re smaller pieces I’m just going to season the chicken strips with black pepper they don’t need any salt cuz they’re already pretty salty out of the package set aside the chicken strips onto a plate back into the same

Skillet now add your broccolini cook them for 2 to 3 minutes on the first side and then flip them all right we’re getting some nice charring on the broccolini on that first side so we’re going to go ahead and flip them over and you’ll see how bright green they’re are

Turning our sauce is reducing really nicely and when you start to see some of these brown reddish bits around the edges just take your wooden spoon to try to scrape off as much as that as you can cuz there’s still more flavor in there we’re going to add some fresh basil to

Our sauce we’re just going to tear some fresh basil leaves in there and let it simmer Together now make a little space in the middle of your broccolini add a little extra virgin olive oil and then we’re going to just Crush one clove of garlic once that garlic starts to infuse the olive oil go ahead and season the broccolini with a little bit of salt and black

Pepper and toss everything together remove it from the heat now that the pasta is cooked scoop out half a cup of the the pasta water get rid of that and then set that aside Now drain the pasta and don’t rinse it now this is what you’re looking for you

See that the sauce has reduced to where there’s almost not much liquid left in it and it’s just the nice chunky Tomatoes here at this point we can add our plant-based cream I’m going to use this oat creamer right here and I’m adding 2/3 of a cup but just add a

Little bit at a time stir that in ooh and we’re looking to create a nice pink colored sauce if it’s not looking pink enough for you you can always add another extra little splash of cream now we need some vegan parmesan I’m going to be using the

Violife brand so let’s go ahead and Grate that you’re going to need 3 oz of vegan parmesan so if you’re using violife it’s a little over half of the block I’ve been simmering the sauce with the cream for about 6 7 minutes now so now we can go ahead and add our grated

Parmesan now gently put in your pen pasta turn off the heat while you toss the pasta into the sauce and if you need to thin it out that’s where you’ll add little splashes of your pasta water so I’m going to go ahead and add a little bit of that reserved pasta water

While it’s on low heat and just make sure that all of the noodles are well coated in your sauce I’m also going to add in those cooked vegan chicken strips and gently toss them in the sauce garnish your dish with some extra shredded vegan parmesan and some fresh

Herbs such as chopped parsley and or Basil oh look at that now that looks Gourmet beautiful pen alav vodka with our little vegan chicken and the broccolis this makes a full date night meal if you’re trying to impress someone you love let’s try It m wow you got to make this it’s nice and creamy tomatoey you don’t taste the alcohol but it’s got such complex flavor to it and it goes really well with the vegan chicken too the parmesan is on point that’s try the broccolini M it’s got some real nice Char to it and
