When life gives you lemons, make this super easy and delicious lemon loaf cake with only few easily accessible ingredients!
Very moist and lemony, perfect treat with your cup of tea or coffee.

Prep time: 15 minutes.
Baking time: 50-60 minutes.
Total: 65-75 minutes.

RECIPE:
All ingredients must be room temperature
I recommend using scales

For the batter:
200g (1+1/3 cup) plain flour
2 tsp baking powder
1/4 tsp salt
200g (1 cup) sugar
2 tbsp lemon zest (zest of 2 lemons)
1 tsp vanilla essence
200g (1 cup) unsalted butter (room temperature)
4 eggs

For the syrup:
90g powdered sugar
60ml (1/4 cup) fresh lemon juice (approximately 2 lemons)

Bake in a preheated oven at 180C / 360F / gas mark 4.
Place it on the middle rack, in the middle of the rack
Baking time: 50-60 minutes, or until toothpick comes out clean.
Every oven is different, baking times may vary slightly, keep checking it with a toothpick every 5 minutes after 50 minutes of baking.

Hello friends! How are you today? 🥰 Cooking oil. Grease well. Tin size: 2lb (21x11x7cm). Loaf tin liner or parchment paper. Set aside and turn on the oven to 180C / 360F / Gas mark 4. 200g (1+2/3 cup) plain flour. I highly recommend using scales. 2 teaspoons baking powder. 1/4 tsp salt. Mix well.

Set aside for later. 200g (1 cup) sugar. Zest of 2 lemons (2 tablespoons). Rub it in to release the flavour. 200g (1 cup) room temperature unsalted butter. 1 teaspoon vanilla extract. Whisk for 3 minutes until light and creamy. On medium-high speed. Scrape down the sides of the boewl.

4 eggs (room temperature). Add 1 at a time. Whisk after adding each egg for about 20-30 seconds. On medium-high speed. Which country and city are you watching from? Please say Hi in comments below 🥰 I would love to hear from you 🤗 Scrape down the sides of the bowl in between.

Sift in dry ingredients from earlier. Mix it in gently. Just until no streaks of flour are visible. Don’t over mix. Bake in a preheated oven on the middle rack, at 180C / 360F / gas mark 4, for 50-60 minutes, or until toothpick comes out clean. Every oven is different.

Let it cool down in a tin for 10-15 minutes. Meanwhile let’s prepare lemon syrup. Sift 90g (2/3 cup) powdered sugar. 60ml (1/4 cup) fresh lemon juice (approx 2 lemons). Mix well. Sift any remaining lumps. Poke holes in a cake. Pour the syrup evenly over the cake.
