Today I’m going to show you how to make Fakorizo. Fakorizo is a Greek inspired rice and lentil salad. I paired this delicious Greek side dish with Greek meatballs, and my family loved it. Recipe below

Ingredients:
½ cup olive oil
1 onion, chopped
1 tbsp minced garlic
7 ounces canned diced tomatoes
1 bay leaf
Salt and pepper, to taste
1 bay leaf
1 cup dry lentils
1 cup Basmati rice
2 tbsp chopped parsley
Lemon and Kalamata olives to garnish

Method:
1) Add lentils to boiling water and cook for 15 minutes. When done, drain but reserve 1 cup of the water. Set cooked lentils and lentil water aside.
2) Soak and rinse the rice until the water runs clear. Soak 10 minutes
3) Add olive oil to a large pot, then the onions. Cook about 10 minutes. When done, stir in the garlic.
4) Next stir in the tomatoes, rice, lentils, and reserved lentil water. Salt and pepper to taste. Cover and cook 15 minutes on low. When the rice is done to you liking, fluff and serve. Enjoy.
