Tahini is not only wonderful in savoury sauces and dips but absolutely divine in baking. There is something truly amazing about a sweet, baked, sesame treat. It is chewy (due to the fluid stretchy nature of tahini) and crumbly (due to the almonds) all at once.. And one you need to make weekly if you want to snack better at 3pm and reap the health benefits of tahini.

Ingredients:
150 g flour
150 g whole wheat flour
80 g grounded almonds
200 g sesame paste (Tahini)
140 – 160 g sugar / coconut sugar
140 – 160 butter (plant based)
1 tsp vanilla extract
salt

150 g white flour 150 g whole wheat flour 80 g grounded almonds a pinch of salt 1 tsp vanilla extract 140 – 160 g sugar / coconut sugar 140 – 160 g butter (plant based) cut into pieces knead dough until crumbly now add 2 tbsp water 200 g sesame paste (Tahini)

Continue to knead until firm the dough shouldn´t be too dry add a bit water if needed form equally sized cookies place the cookies on a baking sheet 175 ° C in preheated oven for 12 minutes the cookies will be soft, take them out of the oven and let cool for 30 minutes
