Red Lentils are very healthy and should be an essential part of everyone’s diet. Red Lentil soup is very popular throughout the Mediterranean region. So are Chickpeas. Hence, I created the ULTRA healthy soup with RED LENTILS and CHICKPEAS.

The best part is that this soup is perfect for BATCH cooking. Store in the freezer and add water after defrosting. This way, you save space in your freezer ❗️

Ingredients:

250 g Red Lentils (Rinse and soak before cooking)
400 g Chickpeas
2 medium-sized carrots
1 small onion
1 celery stick
1 tbs. salt
1 tbs. turmeric
1 tbs. cumin

Add 2-3 tbs. of olive oil to the cooking pot …add the chopped onion and fry on medium heat for 3-5 minutes …add your chopped carrots and celery to the pot and fry for 10-12 minutes on medium heat …cover with lid

…add red lentils to the pot and stir to blend well …keep cooking for 12-15 minutes on medium…cover with lid …add 1 glass of water …add 1 more glass of water if needed …check from time to time to see if the lentils are cooked

…add 400g of pre-cooked chickpeas to the pot and keep on cooking for another 5 min. …add 1 tbs. salt and stir well …this is how the consistency should look like …check if the carrots are soft and add 1 tbs. of turmeric and cumin

…use a blender to blend the ingredients and get the right consistency …perfect consistency to store in freezer without taking to much space away…add water when serving …finally add chili pepper melted in olive oil (or butter) …or serve with pesto click here for the pesto recipe
