Chocolate Fondant/Lava Cake

Makes 8

250g x Unsalted Butter (diced)
250g x Dark Chocolate (70% cocoa solids)
Pinch of Salt
5 x Whole Eggs
5 x Egg Yolks
250g x Caster Sugar
125g x Plain Flour

Butter for Greasing
Cocoa Powder for Dusting

1. Being by preparing your moulds. Generously grease them with butter and dust them with cocoa powder. Shake off any excess cocoa powder and place thin in the fridge to chill.

2. Place a small saucepan of water over the heat and bring it to a simmer. Cover the pan with a heatproof mixing bowl, making sure the bowl does not touch the water. Add in the butter and chocolate and melt them together. Stir in a pinch of salt.

3. In a separate mixing bowl whisk together the 5 whole eggs, 5 egg yolks, and the caster sugar until light and fluffy. Use a stand mixer or electric hand whisk for this. Add the chocolate mixture to the egg mixture and gently fold together. Next, sift in the flour and fold that into the mixture as well.

4. Fill the prepared moulds 2/3 full and bake in a preheated oven at 180°C Fan for 8 to 10 minutes.

Serve with cream, ice cream, or custard, and enjoy!

If you love chocolate then this is the dessert that you definitely need to try let me show you how to make this delicious chocolate fondant we need to start by preparing the mols to do that we need to generously grease them with some butter and then Dust them with cocoa powder

Making sure to shake off any of the excess cocoa powder from inside place the molds onto a baking tray and put them in the fridge to chill next place a small saucepan onto a medium heat with a little bit of water in the bottom and bring it to a boil

Once the water simmering place a heat proof Bowl on top of the pan and add in 250 g of unsalted butter and then break in 250 g of good quality dark chocolate with at least 70% cocoa solids make sure the bowl is not touching the water stir the butter and chocolate together until

It’s completely melted and add in a pinch of salt break five whole eggs into a mixing bowl and then separate another five eggs keep your egg whites for a future recipe and we’re going to use the egg yolks for this recipe place them into the mixing

Bowl as well along with 250 g of castor sugar whisk them together until they’re light and fluffy I’m using a stand mixer to do this but you could also use a small handheld electric whisk or if you’re feeling brave you can do it by hand may take a while but it is good

Exercise size now we need to fold the chocolate mixture into the egg mixture so do this nice and gently trying to keep as much air in the mix as possible now sift in the flour and gently fold that in as well fill your prepared molds 2/3 full

With the mixture and place into a preheated oven at 180° C fan for 8 to 10 minutes take from the oven and leave to sit for a further one to two minutes before taking them out of the molds to remove from the molds gently run a knife
