I really like the plating, but if I’m being perfectly honest, I think this could benefit from a different set of plates, if you have them available. The design reminds me of cells dividing under a microscope, or mold growing on top of liquid.
That’s just my two cents as a home cook.

Is there a sauce for the dish? The plate has a perfect indentation to hold some and I think the langoustine could benefit from it. But lovely presentation, I appreciate how tight and concise it is without too many garnishes.
