Zabuton(Denver cut) aged/flattened/rolled with blistered shishito peppers and scallion ends. Nori wrapped and sous vide, sliced and finished with koji butter and grated cured egg yolk. Daikon cream is broken with chili oil and the garnish is cilantro/carrot/scallion tossed in sushi su and toasted sesame seeds. Cheers
