Hey everyone it’s megan roosevelt your healthy grocery girl and registered dietitian and you’re watching the healthy grocery girl show today i’m going to share with you a quick and healthy lunch idea we’re making a cranberry walnut chickpea salad sandwich a few videos ago i shared with

You how to make my chickpea of the sea salad sandwich and you guys loved this recipe and it’s one of my favorites too so today’s recipe is really similar but we’re going to use some different ingredients to make this recipe you will need one can of organic garbanzo beans

I’m using a 15 ounce can you will also need approximately 2 cups of chopped walnut halves two cups of chopped celery one cup of dried cranberries a pinch of sea salt and one ripe medium avocado you will also need some bread for your sandwich and i just toasted up two

Slices of whole wheat sprouted bread to get started we’re going to add our one cup of canned beans into a bowl now i have drained and rinsed these beans ahead of time and we’re just going to add them into our medium sized bowl here next what we’re going to want to do is

Cut this avocado in half and add it in with our garbanzo beans so i’m just going to clear some space here on my cutting board so i can prep the avocado i start by just cutting the avocado in half and you know the avocado will be ripe because it’s going to have some

Give to it perfect and then to get the pit out i use the knife and i just give the pit a whack i twist and it pulls right out super simple then i’m just going to use a spoon and i’m going to spoon out the avocado meat into our bowl

Next we’re going to use what’s called a potato masher and we’re just going to mash the chickpeas and the avocado together the trick here is that you want to mash your chickpeas just enough that they’re no longer circular but you don’t want to mash them so much that you create hummus

Although a hummus with avocado mixed in would be so delicious once you’ve mashed the avocado and the chickpeas together then we’re just going to add in our other ingredients so we have our chopped walnut halves we’ll just add those in we have our celery i’m going to add about

Half of this just to start we also have our cranberries i’m going to add that in the cranberries just give this recipe such a pop of color and then i’m also going to add some sea salt and that’s really going to bring out all of the flavor now this recipe

We’re going to eat probably today so there’s not going to be any leftovers but if you’re wanting to make this recipe to have lunches prepared ahead of time for the week i would add a little bit of citrus some lemon or some lime and that’s going to help the avocado

From turning brown brown avocado is not desirable so next what we’re going to do is we’re just going to fold all of the ingredients together i’m so excited to eat this it looks so good and if you’re vegan or vegetarian or you’d be plant-based or you’re wanting to eat more plant-based this is

Just such a great recipe it’s filling it’s satisfying and you know most of us are always looking for more healthy lunch ideas and and healthy meals that are also really satisfying and this is definitely one of them once your ingredients are all mixed together we’re going to make

Our sandwich and i’ve grabbed just a little bit of organic yellow mustard here to place onto our toast just so it’s not so dry but this recipe is pretty delicious so you actually could just put it right on but i’m just going to add a little bit of mustard here

  1. This looks so good, though I am not vegan/vegetarian, I still love veggie based meals! I was wondering where you get the dried cranberries! I am trying to find a brand that makes dried cranberries without any added sugar!
