  8. Are you saying to make 100% of the poolish (1L water, 1KG flour, 5 gr yeast, 5 Ge honey) even if I want to make half as much dough as you made for this video?

    Let’s say I want to make 50% less dough than you did. It seems like I’m going to be throwing away 75% of the poolish. Is that right?

    Is there any way to make half as much dough as you did without wasting 750 grams of flour in poolish that won’t be used?

  10. Vito I had an idea for you. You could go to remote parts of the world and cook Pizzas for people who would never get a chance to try Neapolitan Pizzas or pizzas in general. Like a traveling show where you bring a portable pizza oven. Would make a great show.
