Today I’m sharing my easy lemon pepper chicken recipe! This was the first chicken recipe I tried to make when I started cooking. It was so delicious that I would cook it at least thrice a week! This juicy and tasty chicken recipe does not need fancy ingredients and is beginner friendly. Once you try it, you’ll cook it almost every day. So simple to make that everyone can make it. *RECIPE* (2 servings)
INGREDIENTS
1 lb/450g chicken thighs/chicken breasts
3 tbsp olive oil
3 garlic cloves
Optional: fresh parsley and lemon zest
β€” marinade β€”
1/2 tsp salt
1 tsp crushed black pepper
1 tsp oregano/mixed herbs
1/2 tsp cumin powder
Juice 1/2 lemon

METHOD:
1. Cut 1 lb/450g chicken thighs or chicken breasts into bite sized pieces about 1 inch thick
2. Add the marinade ingredients to the chicken, mix well and set aside for 30 minutes to 1 hour
3. On medium flame, heat 3 tbsp olive oil and infuse 3 crushed garlic cloves
4. Add the chicken without overcrowding the pan. This way they will brown well
5. Sear on all sides until browned and cooked through. Chicken thighs will be ready in 5-6 mins and chicken breasts in 3-4 mins
6. Optional: Garnish with some fresh parsley and lemon zest

SUBSTITUTES:
β€’ No lemons?
1 tbsp lime juice can be substituted. Avoid lime zest however

β€’ No cumin powder?
Skip it

β€’ No oregano or mixed herbs?
Dried thyme, rosemary, tarragon, sage, mint and dill work well too

β€’ No fresh parsley?
Fresh cilantro/coriander works well too

TIPS:
β€’ The chicken can be chopped and tossed into salad, sandwiches, wraps and pasta
β€’ Don’t overcook the chicken or it will get too tough
β€’ The salt and lemon quantity might change depending on taste. The amounts mentioned will be suitable for most but adjust at the end if needed

  6. Thank you so much i'm from iran and a girl but i couldn't cook besided a boiled chicken and i never ate chicken breast since i disliked the texture and taste. I just know very basic things. I made this recipe and it tasted sooo good and i made it for my family and they complimented me.
