Chicken, spinach, cheese and sun-dried tomatoes come together to make our STUFFED & BAKED CHICKEN BREAST. This is the perfect date night recipe, hence why we call it dinner for two. With Valentine’s Day approaching, impress your better half by cooking this extremely easy, yet flavorful quick fix meal.

STUFFED & BAKED CHICKEN BREAST
nonstick spray
olive oil
2 boneless, skinless chicken breast, sliced lengthwise into a pocket
1/2 onion, chopped
3 – 4 large sun-dried tomatoes, chopped
2 large cloves garlic, minced
1 cup baby spinach, packed
3 – ounces feta cheese, crumbled (see NOTES) and divided
Greek seasoning blend, recipe below
salt, to taste
freshly ground black pepper, to taste
granulated garlic, to taste
smoked paprika, to taste
1/4 cup chicken broth
1 Tbsp unsalted butter

1. Pat chicken breast with paper towels. Chicken should be as dry as possible.
2. Over medium heat, spray a skillet with nonstick spray and coat it with olive oil. Add onion and cook until translucent, about 5 minutes. Stir in sun-dried tomatoes. Cook while stirring, 1 – 2 minutes. Add garlic and cook while stirring, 1 minute. Stir in spinach and cook until wilted, 3 – 5 minutes. Remove from heat to cool. Once cooled, place into a bowl, season with salt and pepper and combine with feta cheese.
3. While spinach is cooling, preheat oven to 350°F. Season pocket of chicken breast with Greek seasoning. Fill the pocket of each chicken breast with feta cheese and with the spinach-feta mixture. Close pocket and season the top side of each chicken breast with salt, pepper, granulated garlic and paprika. Set aside. Wipe out skillet with a paper towel.
4. Over medium-high heat, spray the same skillet with nonstick spray and coat it with olive oil. Carefully add chicken breast, top side down and cook until golden brown, about 4 minutes. While chicken is cooking, season the exposed bottom half of chicken with salt, pepper, granulated garlic and paprika. Carefully turn over chicken and cook bottom half for 2 minutes. Remove from stove and place directly into oven. Bake 20 – 25 minutes or until chicken reaches an internal temperature of 165°F.
5. With a heat protective glove, remove chicken from oven. Place chicken breasts onto a plate and tent with foil. Return skillet to stove. Over medium heat, pour chicken broth into skillet and deglaze by whisking and scraping dripping from the bottom of the skillet. Bring to a boil, add butter and whisk until melted. Cook until sauce thickens, 2 to 3 minutes. Serve chicken and garnish with a drizzle of reduced chicken sauce.

NOTES
1. You can add more feta cheese if you want stuffing on the cheesier side.

GREEK SEASONING BLEND
2 tsp salt
2 tsp garlic powder
2 tsp dried basil
2 tsp dried oregano
1 tsp ground cinnamon
1 tsp freshly ground black pepper
1 tsp dried parsley
1 tsp dried rosemary, minced
1 tsp dried dill seed
1 tsp dried marjoram
1 tsp cornstarch
1/2 tsp dried thyme
1/2 tsp ground nutmeg

1. Thoroughly combine all ingredients and store in an air-tight container. For a finer texture (or powder) blend spices in a spice grinder before using in recipes.

This is one of the easiest chicken recipes to make. In addition, this can be considered an all-in-one healthy meal. The homemade Greek seasoning gives this chicken an added boost of flavor. Along with the spinach and feta cheese…this is an excellent way to jazz up chicken.
