Here’s how to make a super delicious lemon blueberry popcake add margarine caster sugar self-raising flour baking powder eggs vanilla and milk to a large bowl and whisk until combined scoop the mix into a lined tin smooth it out bake in the oven then allow to cool for the jam

Add blueberries lemon juice and caster sugar to a saucepan and simmer for 5 minutes then add corn flour and mix until combined then allow to cool for the icing whisk together softened butter and cream cheese until creamy then add lemon juice and lemon zest and whisk these in

Gradually sift in the icing sugar and whisk until smooth poke holes in the cooled cake then add jam to the top of the cake making sure it goes into the holes smooth out then spoon on the lemon icing and spread it out to the edges top with blueberries then refrigerate

For at least two hours enjoy

    Carmen I feel like you should keep your last name. And probably even rename your Channel something like “Carmen Pritchett Reloaded”. My reason for saying that is because you earned that name plus that’s what people know you by. When I searched your name I found the old channel so maybe if you keep the name then when ppl look for your new channel it’ll be easy to find.

    For those who dont know, castor sugar is just really fine sugar. Not quite confectioners sugar. Its a bit more grainy.
