Cast Iron Home Fries with Sausage & Onions | Layers of flavor

Feeds 4/6 – cooking time can vary! Should take from start to finish about 1 hour
*The potatoes will take the longest – should be nicely browned and fork tender.

Ingredients & measurements:
You will need a Cast Iron (for the best flavor) OR I’ve made this in my Dutch Oven – works just as good! 😋

2 packages of Smoked Sausage Links (any favorite brand – I use, Kielbasas)
1 large yellow Onion or two medium (sliced thick)
About 6/7 large Rustic Potatoes (cleaned & diced) (you can peel the skin or use with skin – your preference)
2+ TBSP of Butter (I use salted)
Olive Oil
Salt & Pepper to taste (I use fresh ground black pepper and pink Himalayan salt, you can use Kosher)
1 TBSP Garlic Powder (or more per taste)
1 TBSP Oregano
1 TBSP Parsley
1/2 TSP Crushed Red Pepper Flakes (or more per taste)
2 TBSP Paprika (You can use smoked, I use regular)

Hey guys welcome back to my channel so today we’re gonna make one of my favorite cast iron dishes this is my home fries with smoked sausage and onion it’s a great easy dish you only need a few items and the great thing about it

Is you use one pan and you’re good to go you don’t need some potatoes you can peel yours I leave a little skin on but make sure you clean them really well before dicing them and they’re up there good bite-sized pieces I don’t like them too small you’re gonna need some diced

Onion you’re gonna need some smoked sausage links you’re also gonna need some olive oil and some butter and then the seasonings you’re gonna need are freshly ground black pepper salt I’m using pink Himalayan parsley oregano garlic paprika and some crushed red pepper flakes I’ll leave the ingredients in the

Description box for you guys as well and that’s it guys that’s all you need to make this delicious meal so let’s get cookin okay so the first thing we’re gonna do is you’re gonna get our cast iron skillet nice and hot I’m gonna put this on medium-high and we’re gonna go

Ahead and add some olive oil and about a tablespoon of butter let that melt and get hot and we’re gonna add our sausage to that all right that’s great I’m gonna go ahead and add my sausage and what I did was I just cut them not too thin not

Too thick we’re gonna Brown the smoked sausage we’re gonna go ahead and add some fresh black pepper because we want to season every layer every time we’re cooking our salt you can use kosher I like pink Himalayan I think it’s better for you and we’re gonna let that get

Nice and hot now before we start moving it and flipping it so we’re gonna give that a couple of minutes and I’ll show you the next step all right guys that’s getting nice and hot so buddy just move them around get it nice and incorporated with the salt and pepper

For the oil and a little bit of butter that we put in there all right we’re gonna let that cook for a little bit It is very couple of minutes guys go ahead and start mixing what’s up beautiful that is that’s what we want a nice your killer So when we’re done getting a nice sear on the sausage we’re gonna go ahead and put them in a bowl I have over here and start on the next step you’re gonna be back back in a couple of minutes All right that looks great what I’m gonna do is I’m gonna go ahead and transfer this to my goal here so you can start doing the next step and don’t get rid of that grease from the sausage don’t you dare do that that’s all the good flavors that we’re gonna get on our

Potatoes and onions you want that that looks great and to this we’re going to go ahead and add our onions you go ahead and break that up get this nice and seasoned in the sausage oils and get this nice and brown so just a couple of minutes

Now for this of course we’re gonna layer our onions with some seasoning a little bit of pepper and a little bit of salt we’re gonna let this cook and get nicely caramelized so they look take probably about two minutes and we’ll be right back go ahead and mix it around look how

Beautiful it looks they’re getting nicely brown and caramelized it’s smells amazing in here all right we’re gonna let that cook for another minute and take that out that our potatoes all right guys we’re gonna take these onions out add into our sausage into this we’re going to add a little

More olive oil another table right on the butter melt we’re going to add our potatoes now all right so to this we’re going to add salt and potatoes absorb a lot of salt so do a nice chair of Sol pepper oregano now I don’t measure but I will

Put the measurements what I use in the description box for you guys I just added garlic Nelson parsley paprika and a little bit of crushed red pepper please get that a mate we’re gonna let this cook for a couple of minutes let it get nice and brown and

Then we’re gonna mix it flip it and we’re gonna season the top layer so with that guys alright guys so we’re going to go ahead and flip our potatoes be careful we look down they said it’s starting to get a nice golden-brown now we want to cook these potatoes so

After we’ve done browned it we’re gonna lower the temperature of the stove a little bit so we can cook the potatoes and not burn the potatoes all right so now that we’ve moved everything around it’s gonna go ahead and add a little bit more seasoning on the top so that

Everything is nicely evenly seasons and like I said I’ll put ingredients and measurements in the description box for you guys all right so I know what this cook on that side for a couple of minutes and then we’ll be back to do another flip for that night all right

Guys we’re going to go ahead and pull it off there looking beautiful smells delicious and then a little bit will taste for seasoning might need to add more salt or pepper oh great so we’re gonna do now is we’re gonna lower the temperature to medium low

Because what we want to do is we want to cook the potatoes in a couple of minutes so we’re gonna do is we’re gonna add back the sausage and onions to it and just let it all marry together and become delicious if we’re going to add the sausage and onions back to it

Get this nice and incorporated all right so we’re gonna let this sit and continue to cook now remember I put on medium low and I don’t have a top big enough for this I wish I did so you can get the potatoes cooking faster but I don’t so we’re gonna let this go

Keep on flipping it every couple of minutes to make sure that everything’s cooking evenly and we’ll be back there than a couple minutes to check on it all right guys we’re gonna go ahead and taste for seasoning the potatoes are just about done so we’re gonna go ahead

And taste a potato and make sure we don’t need any more seasoning mmm talk that’s really good I think it needs more salt and pepper cheetos take a lot of salt I do a little bit more pepper not too much all right we’re gonna let that cook and we’ll be back

With couple minutes check on it alright guys I’m going to mix it check the potatoes that again now this will probably feed I don’t know four to six people you could do some scrambled eggs on the side I usually do but it’ll feed up it four to six people

All right let’s check the potatoes see if they’re cooked and you don’t want them too soggy or mushy you know it’s home fries you want to have a nice little bite obviously cook but have a nice bite so I’m gonna tape this little guy over here mmm

  4. Thanx 4 the reminder. Where I come from this meat is called kielbasa. U wouldn't find this on a pizza or N lasagna. R sausage has a different texture & flavor that can B used N this also.
