Recipe:
1 lb Italian sausage (removed from casings)
1 yellow onion (diced)
3 cloves garlic (sliced)
4 tbs tomato paste
8 cups chicken stock
2 tsp dried oregano
1 pint heavy cream
8 basil leaves
8 oz spinach
20 oz cheese tortellini

Bring a large pot to medium heat and begin to sauté the sausage breaking it up as it cooks. Once cooked and broken up remove with a slotted spoon to a plate. In the remaining fat sauté the onion and garlic u til translucent and softened. Add the tomato paste and sauté another 2 minutes. Add the sausage back to the pot. Add the stock, oregano, and season with salt and pepper. Bring to a simmer. Add the cream and tare the basil leaves in. Bring to a simmer once again and add the spinach. Simmer for 15 minutes then add the tortellini and cook for another 4 minutes. Adjust salt and pepper.

Simmer she’s back to a simmer so now going in with 8 oz Spinach just give that a stir I’m going to let that cook for about 15 minutes till that spinach is nice and Welted all our 15 minutes is up so now I’m going to go in 20 oz of cheese tortillini we’re just going to cook those for 4 Minutes all that tortillini is cooking I’m going to go ahead and taste it so I can adjust my Seasoning I’m going to go in with just a little more salt and some more pepper All 4 minutes is up so I’m just going to turn off my heat little scoop a bowl out take a look at what we got now that is one delicious tortillini soup cheers and guys don’t forget hit
