Ingredients:
Sauce –
2 small cooked beets (peeled)
1/4 cup raw cashew
2 garlic cloves
Small red onion
1 tbsp olive oil
Salt + pepper
For blending: 1/2 cup plant-based milk + 1 tbsp nutritional yeast

Risotto –
1 cup risotto rice / round rice / Arborio (washed under water and drained)
1.25 cups boiling water (up to 2.5 cups in total)
1/2 tsp salt
1 tsp organic soup powder

Vegan parmesan –
1/3 cup raw cashew nuts
1 tsp Himalayan salt
1/2 tsp chili flakes
2-3 tbsp nutritional yeast
1 tsp dried basil / oregano
