We’ve all seen so many lemon bar recipes: some big, some small, some with meringue on top. I’ve made these many times and found the perfect balance for myself. They’re quick to make and great with morning coffee!

What you need:

For the crust:

flour 100 g
sugar 20 g
salt 1 g
butter 60 g

Bake crust at 180° C for 16 – 18 min

For the filling:

egg 1
1 ½ lemons + lemon zest
powdered sugar 100 g
flour 40 g

Bake crust with filling at 180° C for about 16 min

Some things:

– I used 8.5×17.5 baking pan;
– for the filling I like to use powdered sugar, it makes it tender and brings out the lemon flavor well;
– I sift flour and powdered sugar for the filling so that there are no lumps and the mass is smooth;
– try the filling for sugar, you may want to add more, because lemons are always different;
– I frequently check lemon bars in the oven to avoid overcooking. It’s ready when the center is set but still jiggles a bit;
– cool the bars before cutting.

  1. I made your bars. Excellent and very easy to make. I used a 8"×8" casserole dish. It was perfect. I used oat flour and brown sugar for the crust. It tasted very lemony and delicious.
