Ingredients:
• Boneless Skinless Chicken Breasts
• Parmigiana Reggiano Cheese
• Homemade Tomato Sauce
• Panko Breadcrumbs
• All-Purpose Flour
• Onion Powder
• Garlic Powder
• Vegetable Oil
• Black Pepper
• Fresh Parsley
• Sea Salt
• Eggs

Directions:
1. Begin by pounding out the chicken breasts until they are of equal thickness.
2. Season both sides of the chicken breasts with onion powder, garlic powder, black pepper, and sea salt.
3. Prepare three shallow dishes for dredging: one with seasoned flour, one with beaten eggs, and one with seasoned panko breadcrumbs.
4. Dredge each chicken breast in the seasoned flour, then dip into the beaten eggs, and finally coat with the seasoned panko breadcrumbs.
5. Heat vegetable oil in a frying pan over medium-high heat. Fry the breaded chicken breasts until golden brown and cooked through. Remove and place on a cooling rack.
6. Top each chicken breast with grated Parmigiana Reggiano cheese and a spoonful of homemade tomato sauce.

  1. Next time try cutting the fillet in half like a book and then pounding it lightly so as to not damage the meat as much. I do 20 or so of these a day as I’m a butcher and I have people coming back all the time!
