Slow Cooker Shredded BBQ Chicken Sliders with Coleslaw

It’s too hot to cook inside! It’s too hot to BBQ outside! So what do ya do?! Break out the slow cooker! These BBQ chicken sliders are so simple to make, yet pack a huge punch of flavor. Top it with my simple coleslaw and you are in for treat. Honestly I am so tired from the new puppy I can’t think of any other things to say other than “just make it!” LOL

Slow Cooker BBQ Chicken Sliders & Coleslaw Recipe

| Ingredients |

1 Tablespoon Dijon Mustard
2 Tablespoons Olive Oil
1 Tablespoon Apple Cider Vinegar
1 Tablespoon Worcestershire Sauce
1 Tablespoon Italian Seasoning
1 1/2 Cups BBQ Sauce
3 Cloves Garlic, Minced
1 Medium Onion, Diced
2 Pounds Boneless Skinless Chicken Breasts
Salt, Pepper, Cayenne to Taste

Coleslaw
1/4 Small Green Cabbage, Shredded
1/2 Small Red Cabbage, Shredded
1 1/2 Cups Shredded Carrot
1 1/4 Cup Mayonnaise
2 Tablespoons Stone Ground Mustard
3 Tablespoons Apple Cider Vinegar
4 Teaspoons Granulated Sugar
1 Teaspoon Celery Seeds
Salt and Pepper to Taste

| Instructions |
In a medium bowl, combine Dijon mustard, olive oil, apple cider vinegar, Worcestershire sauce, Italian seasoning, BBQ sauce and garlic. Whisk well to combine.

In a large slow cooker, add chopped onion. Spread evenly across the bottom. Add chicken in an even layer. Season well with salt, pepper, and cayenne. Add sauce over top and spread evenly.

Cook on high for 3-4 hours.

Once cooked, use two forks to shred the chicken apart. Add shredded chicken back into the slow cooker with the sauce, mix, and allow to cook another 30 minutes.

Coleslaw:
Toss purple cabbage, green cabbage, and shredded carrots together in a large bowl.

In a separate bowl, combine mayo, ground mustard, apple cider vinegar, sugar, celery seeds, salt, and pepper. Whisk to combine. Pour over chopped vegetables and toss to coat.

**Feel free to add more mayo if you wish.

Allow coleslaw to set in refrigerator for a least 3 hours.

So I’m gonna start off by saying I am sorry okay I know I’m not the greatest youtuber in the world my upload schedule stinks but I have a really good reason and I’m about to show you what the reason is okay hold on so this is the

This is what’s pretend today I’m gonna be showing you guys how to make a slow cooker barbecued whole chicken sliders it’s been ridiculously hot too hot to cook outside and too hot to cook inside so that means you’ll break out the slow cooker these are so ridiculously simple

And I know you guys are gonna absolutely love this recipe so without further ado let’s get started so we’re gonna start by making the sauce that our chicken is going to cook in so in a small dish I’m adding some Dijon mustard some good quality olive oil apple cider vinegar

Worst asure sauce and Italian seasoning now if you guys are ever wondering what Italian seasoning I use this is it because I’m always using it this is literally the most perfect blend of Italian seasoning out there so you just want to go ahead and give that all a

Good whisk together and then we’re going to switch over to a bigger bowl and in that bowl we’re going to add some good-quality barbecue sauce I like using sweet baby Ray’s along with some minced garlic and then go ahead and add that sauce that you just put together a

Second ago give that a good whisk together and set it aside so next we’re gonna fire up our slow cooker on high so that it’s nice and hot when we’re ready to use it now if you guys are on the hunt for a really good slow cooker this

One is amazing and I’ll leave the link in the description box below they did send me this but I wouldn’t steer you wrong I love the slow cooker it cooks everything perfectly so into the slow cooker I’m adding some onion spreading that out then I’m gonna add some boneless skinless chicken breasts you

Can use any kind of chicken you want but make sure it doesn’t have any skin on it go ahead and pile those in and then we’re gonna season it liberally with salt pepper and of course can’t forget the Cayenne then we’re gonna drizzle over that deliciously amazing looking

Sauce over at the top oh I mean come on look at that is amazing go ahead and spread that nice and even so that everything is mostly coated and then we’re gonna put a lid on that cook it on high for about three to four hours now this totally depends on your slow

Cooker like I said so make sure you keep your slow cooker in mind when you’re making this so now we’re gonna move on to making the coleslaw so all we’re gonna do is shred up some red cabbage purple cabbage whatever you want to call it along with some green cabbage and

Some shredded carrot and then for the dressing just use some good-quality mayonnaise some ground mustard apple cider vinegar sugar and celery seed and of course a pinch of salt and pepper give that a good whisk together and then go ahead and pour that over your chopped up cabbage and carrots

And then give it a really good toss together and then I like to store it in the refrigerator that way all the flavors have a chance to meld together so once my chicken is done I go ahead and take it out and I use two forks to

Shred it up as best as I possibly can and then I put the chicken back into the slow cooker along with all of those juices and give it a really good toss together and then I put the lid on and let it simmer for another thirty minutes

Just so that all of the flavors can really saturate the chicken then all that’s left to do is to assemble this bad boy up slap on that chicken slap on that coleslaw and make a mess while you’re doing it slap on that cap and if you’re a total

Imbecile like me make sure you chop it in half and smoosh it in the process so you can show everybody what it looks on the inside and that is absolutely it so here is the beautiful final product you know it’s gonna be doing you can’t go

Wrong with cold but boom boom what am I saying and you can’t go wrong with barbecued pulled chicken and coleslaw I mean come on really flavor explosion these are perfect for if you’re having a big family gathering and you don’t feel like turning on the oven you don’t feel

  7. Slow cookers are good, but for meat nothing beats a smoker. I bought a Pit Boss Austin XL pellet smoker and the BBQ is exceptional now. You can even sear on the one I have. My favorite is Texas brisket and South Carolina pulled pork though.
