·35-45 steamed collard greens

Knowledge with my um friend today is my first episode in Mama’s Greek cooking today I’m going to share with you my experience to make DOA I should make jiki too it’s very popular Greek Mediterranean food usually they make it with grape leaves but today I’m going to show you how to make doad

With u color greens which they very rich in uh vitamin C calcium uh actually they more better than sputs yeah so it’s good to eat them every day so I I used to make dad with these leaves you can it’s it’s easy to find them and very tasty really delicious

So I’m going to try to show you how to make color greens suitable to make a dolma doad which is dolmadakia to roll it so there is a there is a steam we have to cut the steam and make it as thin as we can so if they’re a little bit big you

Cut the Steam and you do again the same thing try not to cut your fingers that’s it of course I washed them before When you see like this big leaves try to cut them make them shorter and again try to cut the steam make it thinner after I cut them and make them ready for the size I want I boil a little bit of water and steam them for 5 minutes 5 minutes is enough

Because they going to be boiling with the ground meat and everything else and the rice once the water is boiled you put the leaves for 5 minutes with open lid 5 minutes to steam them and then after 5 minutes you put them in cold water so

You can cool them down so now now I’m going to show you what I use for stuffing 1 lound extra lean ground beef organic about 35 steam color greens half cup means parsley half cup Plum tomato crust half a cup tomato sauce 1 tbspoon uh salt 1 teaspoon

Pepper 1 teaspoon meat and one teaspoon cumin I also use 1 and 1/2 cup brown rice which I soak with water 30 minutes ago uh with warm water it helps cook faster brown rice takes longer than white rice so uh and also I use 1 and 1/2 cup crust

Onion and uh I’m going to throw some extra virgin olive oil in the stuffing about 1 to two tablespoons gives extra flavor and taste so I’m going to use 1 and 1/2 cup Rice I’m going to use the onion onion makes the food so tasty and sweet so don’t afraid to use onion right it’s good for your health Parsley don’t be afraid to use parsley and I’m going to use the spices salt if you like it more salty you can use more salt uh this is regular actually I use a little bit extra when I boil the Dadaa and a little bit olive Oil so let them sit in about 10 minutes and then we’re going to start rolling uh the leaves okay it’s about 10 minutes we let the stuffing SE and now we’re going to make it roll we’re going to roll the leaves okay I love all the leaves so much

Fun I can’t I can’t wait to have grandchildren to teach them all right they’re not easy to put on but it’s necessary right okay so we’re going to start from this side we put the ground beef here fold this side first then the other side

And then try to roll it from the top to the bottom if you make couple of them then you use to and they they’re going to look much better so I make two of them We’re going to make as much as uh leaves we have we’re going to cover the bottom it’s about two stacks of uh dlma it has a little bit work but it’s really fun I do have a lot of fun with I make them they’re so neat

So after we done we we finish all the leaves um sometimes I might you might have leftover Crown beef if you have extra leaves you can use them or you can put it in the freezer and use it next time so after we finished two uh stacks

Of dolmadakia we’re going to put a little bit extra salt little bit olive oil little bit of lemon and fill it up with chicken stack I use organic chicken stack it gives more flavor we’re going to fill it up put some lemon wedges medium to low heat cover

It and let it simmer for an hour and a half and as soon as the the liquid is absorbed it’s ready so good luck and good appetite sometimes when the it’s a rapid boiling um it’s it’s good to use a plate side down so it doesn’t let the Daka go
