Pearl Couscous Salad is easy to make and never fails to impress.Great one to take to gathering.These past pearl can give a great taste to a picnic salad. You have to cook them the correct way.This salad is loaded with nutrition and flavor from the veggie.
INGREDIENTS:
2 cups pearl couscous
4 cups of water
1 yellow pepper
1 cup diced cucumbers
1 yellow pepper diced
1/2 cup red onion chopped
1 cup red radishes diced
1 cup sweet tomatoes diced
Salt and pepper to taste
4 tbsp olive oil
Juice of 1 lemon
INSTRUCTIONS:
Into a pot add the water with salt and olive oil and bring to a boil. Add the pearl couscous,cover and simmer for 10 minutes.When ready,drain the extra water and let sit for few minutes.Transfer to a large bowl then add the vegetables. Drizzle olive oil,salt,pepper and lemon juice. Combine everything well and serve.
