Amazing Apple Tarte Tatin 2 cups all purpose flour 1/4 teaspoon salt + 2 tablespoons sugar 6 ounces (1 1/2 sticks) chilled unsalted butter, quartered lengthwise Pulse four times Add 1/4 cup chilled vegetable shortening Pulse 5 or 6 times Add 1/2 cup ice water and pulse 3 more times

You want this texture. When you pinch the crumbles of dough it should stick together. Pour out the dough crumbles and form it together into a ball. With the heel of your hand , push clumps of dough in front of you. This is the final blending technique

Form a ball or disc and wrap in wax paper. Chill the dough for at least 2 hours minimum. Now we make the caramel. You need 1/2 cup sugar. Pour in a saucepan over medium low heat.

Once it starts to simmer and change to a amber color then its time to remove from heat. Pour the caramel into a 9 to 10 inch cake pan. Move the caramel around so it will cover the bottom of the pan evenly. Peel, core and quarter 6 to 7 apples.

Just like this… Set aside into a bowl and cover the apples with lemon juice. Over medium high heat in a saucepan…. add 150 grams of butter or 1 and 1/4 sticks. Once it starts to melt add 3/4 cup sugar. Add 1 cup of water. Add 2 tablespoons vanilla extract

Add a little bit of cinnamon. Bring to a boil then add the apples. Add 1/2 cup more water if needed. Cover and cook for 10 minutes. Make sure the apples are fork tender. Then remove from the saucepan with a slotted spoon and set aside.

Add your apples to the cake pan. Arrange them how you want. Just make sure they are tight together. Get your chilled dough out and roll to 1/4 inch thick. Now put the rolled dough on top of the cake pan and cut.

Push the dough down into the pan and around the apples. Cut three slits in the top. Bake at 355 F for 35 to 40 minutes. Let cool for atleast 1 hour before you flip it over! Time to flip. Flip onto whatever you want. We just used a cutting board.
