This is the perfect way to use up some overripe bananas! I’m blown away by the taste and texture. Recipe in the comments 🙂

Recipe:
2 cups whole grain flour or oat flour
0.5 cup chopped walnuts
1 tsp baking powder
0.5 tsp baking soda
1 tsp cinnamon
0.5 tsp salt
3 ripe bananas (medium to large)
1 cup dates, packed
0.75 cup boiling water
1-2 tsp vanilla extract
1 tsp apple cider vinegar
Chop up dates into small pieces. Boil water and pour over dates. Let sit to soften the dates while working on the next steps.
Preheat oven to 350F. Line a 8” by 4” pan with parchment paper.
In a large bowl, add flour, walnuts, baking powder, baking soda, cinnamon, and salt. Whisk gently to combine.
In a medium bowl, mash bananas. Add softened dates and vanilla. Stir to mix. Transfer about three-quarters of the mixture to a blender (I just used a bullet size one) and blend until smooth. Return the blended mixture to the bowl and mix with the I blended portion. The idea here is to still have a few chunks of dates in the bread, but if you want no chunks then blend the whole mixture. Add apple cider vinegar and stir to combine.
Add the wet mixture to the dry mixture and stir until just combined. Do not overmix! Only mix until no dry flour remains.
Pour the batter into the lined loaf pan and use a spatula to make sure it spreads to the edges of the pan and the top is level.
Bake for around 45-60 minutes until the top starts to look golden and a toothpick comes out clean. After removing from the oven, let sit for 10-15 minutes to set before cutting off a slice!
