    Chocolate Cream, 1830 (The Cook's Dictionary, and House-Keeper's Directory)

    1 pint of whole milk
    0.5 cups of cream
    3 egg yolks
    0.6 cups of powdered sugar (a little over half a cup)
    2 ounces/0.25 cups of grated chocolate, or cocoa powder. Use American Heritage brand chocolate if possible. This closely mimics the spiced chocolate that existed in the 18th & early 19th centuries which included cinnamon, anise, nutmeg, and cayenne.

    In a saucepan combine your milk, cream, egg yolks and powdered sugar. Whisk till well blended then set over medium-low heat. Be sure to whisk very frequently (constantly if possible) until the liquid has been reduced by 3/4. This can take some time but is necessary to create a thick chocolate cream. Once the liquid has been reduced whisk in your chocolate. Cook for 1 minute longer and remove from your heat. Strain through a fine mesh sieve. Chill till cold and serve. Delicious!

  5. Hummm, just learned the following: 1847, British chocolatier J.S. Fry and Sons created the first chocolate bar molded from a paste made of sugar, chocolate liquor and cocoa butter. Swiss chocolatier Daniel Peter is generally credited for adding dried milk powder to chocolate to create milk chocolate in 1876. So did Ron use dark chocolate or milk chocolate?

  8. My husband loves Chocolate Cream, I call it Pots de Crème au Chocolat. I’ve been making it every couple of weeks for several years now, he’s a chocoholic, lol. I use half & half, don’t add any sugar and use 70 % dark chocolate. Add a little cinnamon and make it Mexican chocolate. 😋
