Hey everybody it’s Mike from chili pepper madness today we are making a Carolina mustard barbecue sauce Carolina mustard barbecue sauce is super popular in South Carolina where it came from and you’ll also find it all over North Carolina now that I live in North Carolina I see it everywhere and I’m

Super happy for that it’s really unique in that it’s a mustard base and it’s extra nice and sweet from honey and brown sugar and there’s lots of vinegar it’s got a delicious tang to it and it’s definitely one of my favorite barbecue sauces I love it so much so let me show

You how to make it so let’s talk about the ingredients for our Carolina mustard barbecue sauce we are using a lot of yellow mustard as our base and I’ve gotten a lot of honey and brown sugar for an excellent sweetness we have apple cider vinegar we have ketchup worship sauce and our

Seasonings I have garlic and you can use cayenne or paprika for a milder version as well as salt and hot sauce so let’s get cooking so we whisk all of our ingredients together in a bowl and I have 3/4 of a cup of yellow mustard get it into the

Bowl yellow mustard is a outstanding base you can use out the mustards but yellow just just really makes it rock then there and I have 1/2 a cup of honey so it’s quite a bit of honey get it put in its gonna bring a nice nice sweetness I love honey

Mmm got some fresh local honey and I have 1/2 a cup of apple cider vinegar placed and we have a quarter cup of brown sugar I’m using light brown sugar and I have a couple tablespoons of ketchup get that in and a tablespoon or so of were sister sauce unique flavor

And I have I think I’m about a teaspoon of garlic powder and you can use more if you want to I have cayenne or smoked paprika whichever one you want to use or die’s both and a bit of salt add some excellence to it get it stirred up and

I’m gonna use my whisk here to get it nicely blended look at that mmm it’s already smelling delicious this is such a great recipe you guys it’s so good holy cow all right look at that so this is our Carolina mustard barbecue sauce right here and next thing we’re

Gonna do is we’re gonna go ahead and simmer it in a pan for about 10 minutes or so so really let the flavors bloom and blend together and then we’re going to enjoy the heck out of it so all right be right back okay so I’ve

Got a pan i heated up to about medium heat so I’d use a pot as well and I’m going to add my barbecue sauce to the pan get it all in here so then down and do not forget hot sauce so this is an optional optional

Ingredients you don’t have to use it if you don’t want to I like to you know this is like a homemade Cayenne style I’m sorry Louisiana style homemade cayenne sauce a little bit just add some heat and flavor delicious vinegar pop and we’re gonna stir it up here

All right and now we just let this simmer for about ten minutes to let the flavors develop get that bloomin deliciousness going and alright let’s give it a taste when it’s done alright let’s give it a taste it had been simmering for about ten minutes ten minutes or so

I will love with this stuff it’s so tangy excellent sweetness hmm and it’s so good you guys gotta try this I love it that’s it guys that’s how you make a mustard barbecue sauce like I said it’s super tangy excellent sweetness I just love the overall flavor and you can make

It spicy if you want to is usually not very spicy but you can if you want to it’s it’s outstanding on pork if you guys have a good smoked pulled pork a little bit of a Carolina mustard barbecue sauce on it and boom you have perfection right there so you guys got

  1. I’ve been using vinegar Carolina sauce for ever and saw this on a Rodney Scott YouTube video and I will be trying it today. I have a 8# butt on so looking forward to something a little new tonight

  2. Made this tonight since I’m smoking a pork butt tomorrow. The sauce tastes delicious but it’s almost too sweet for my liking. I’d probably skip the honey next time but other than that it’s delicious!

  3. Coming from TEXAS… We usually don’t make our sauce with mustard base… But I’m gonna give it a heck of a try!!!! Looks very good and super easy…

I can let it simmer for 30 min to 1 hour to make it thicker too?

  4. I like the heat and strength of english mustard. Maybe using half english and half american would be interesting too.

  5. Stumbling through YouTube at 3am while I wait for my hamburger to thaw and now my hamburger is being ignored as I make mustard and chili sauce lmao good stuff man. Really enjoy the way you present the information.

  6. I live in North Carolina too
Mustard-based sauce is nice, but my top two favorites are definitely tomato-based and vinegar-based sauces

  7. I recently found your channel and I'm really excited to try these recipes out!! I love how you educate and don't force the exact measurements/ingredients on anyone. You're definitely an excellent teacher so keep up the enthusiasm. Love what you're doing!!

  8. I’m from Charleston, SC and this bbq sauce is so close to Roberts Drive inn or Maurices sauce!!! So delicious!!! I’m going to can this up so I can have a years worth of sauce.
    THANK YOU!!!

  9. Great video! I make a similar recipe to this everytime I make pulled pork. I was a big KC bbq sauce fan, and still am, but the mustard base is almost addictive. Especially in pork.

The vinegar based sauces are the ones that I don't like.

  10. MY DUDE. This takes me back to teaching in Brevard, NC…there was a BBQ joint I’d always, always go to because it was so dang good, and this sauce almost nailed the exact taste! I think next time I’ll cut the sweet elements in half so it’s more vinegar-y and less honey mustard with a kick, but this is damn good. I can’t even share it with my friends, because I kicked the whisk and spatula so often making it.

Pork shoulder in the slow cooker for 8 hours + this sauce + some slaw or German summer salad? Turn down your bed before you start eating, you’ll need a safe space for when the food coma hits.

  11. Just made my first batch. Wow! I added some more cayenne and hot sauce for my personal taste, but this is a great recipe!! Thanks!

  12. I put it this sauce together with some hesitancy. So much honey. But, in the end it deserved the lip smakin' seal of approval. Tangy, sweet, and most of all….ROBUST!
    BRAVO!

  13. I'm from NC and I always get a bit shamed for the fact that I think South Carolina's signature Mustard BBQ is superior to NC's 'strip your taste buds off' sweet vinegar sauces. :')

  14. I live in the lowcountry of South Carolina and we love mustard base sauce. I always have at least two bottles in my fridge.

  15. I live for BBQ and make my own sauce. I need the flavor of smoke in mine so the only tweak I do for the all is the addition of Wright's Liquid Hickory smoke..

  16. Excellent sauce for sure. I used to work at a hotel and one of our chefs made his version of what he called carolina gold sauce. His was very similar to the one you shared in this video. We did it with a combination of yellow, whole grain and dijon mustard. We served it on our smoked brisket sandwichs. Very very good with smoked pork shoulder and pork butt. Thank you sharing and reminding me of this great sauce. Much appreciated.

  17. Made this recently. Stunningly delicious. Now I have to make some for myself and friends. Gave the first batch to family. Thank you so much for this excellent recipe.
