Orange hummus with balsamic vinegar roasted Brussels sprouts and broccoli

Who doesn’t like a nice creamy hummus????? This version is wintery and full of vitamins because there’s plenty of orange. The extra kick? The sweet and sour of the orange, balsamic vinegar and cranberry combination…. is simply delicious ๐Ÿ˜‹

INGREDIENTS (for 4 people) ๐Ÿ“‹

For the hummus
250 grams chickpeas
2 tablespoons of tahini
1 clove garlic
1 orange juice ๐ŸŠ
1 teaspoon cumin
5 grams capers
2 tablespoons evo oil ๐Ÿซ’
2 ice cubes โ„๏ธ

For the vegetables
400 grams Brussels sprouts
1 large red onion ๐Ÿง…
1 medium-sized broccoli ๐Ÿฅฆ
1 orange juice ๐ŸŠ
2 tablespoons maple syrup ๐Ÿ
3 tablespoons EVO oil ๐Ÿซ’
1 tablespoon balsamic vinegar
2 tablespoons cranberry
Rosemary
Salt & pepper
Balsamic vinegar glaze

To decorate
30 grams pecans
Pomegranate kernels

PROCEDURE ๐Ÿด
For the hummus
Squeeze the orange to get its juice. Put the orange juice and all the ingredients for the hummus in the blender and blend until you get a soft and rather thick consistency (it should not be liquid).

Let’s prepare the vegetables ๐Ÿฅ„
Clean the Brussels sprouts and cut them in half.
Peel the broccoli stem keeping it whole, wash it and cut it into quarters.
In a bowl mix all the ingredients for the sauce and then pour it over the sprouts that you have placed on a baking sheet. Add rosemary and cranberries.
Next to the sprouts place the broccoli and drizzle with oil while also adding salt and pepper. Bake at 200 degrees for about 30 minutes.

Of everything so let’s dive in the recipe and let’s cook together first of all I started by removing the outer leaves of the versel sprouts and wash them and then chop them in in half very easy just chop them in half and put them

In a bowl and then move on to the Red Onion you’re going to chop The Red Onion too and it’s got to be coarsely chopped it’s not finely chopped and then you set the onion aside and we go back to our brassel sprouts and we started doing a

Little we started doing a little bit of seasoning with some black pepper with some salt of course to taste and I also added quite a bit of Rosemary which I really love it comes from my dad’s garden and so I love it even more if you like this recipe and you’re

Seasoning of the brassel Sprouts olive oil balsamic vinegar and orange juice we put the brassel Sprout Sprouts on a baking tray and we spread them out nicely and that’s where we start pouring all this balsamic vinegar of goodness on it we also add some cranberries to the

Mix and then we put in the red onion let’s get our hands dirty and mix all the veggies very thoroughly and then we add a little bit of balsamic vinegar and then we move on to the broccoli the broccoli as you can can see I left it whole I only removed a little

Bit of the outer layers on the stem and then I chopped it in half and I put it back in with the brassel Sprouts added a little more balsamic vinegar glaze to the brel sprouts and some salt and extra virgin olive oil to the broccoli while

The veggies are in the oven baking for us let’s move on to the hummus this is a hum hum with a kick it’s an orange hummus with orange juice so you know how it’s made it’s you put in the chickpeas the garlic the cumin the salt and pepper the tyen I put

In a ton of ttin because I love it and then the orange juice mine was one uh orange and oh and of course I also add some ice cubes because it leaves it sof mine was one orange um if the Orange is particularly juicy you might have to add

A few more chickpeas because it might become a little liquid which is what actually happened to me uh but just don’t worry if you see that it’s a little liquid just add a little more chickpeas and it will be perfect so now that our veggies are perfectly cooked

You spread the hummus in a plate and you start adding all our brasel Sprouts the broccoli you add pom grenade it’s a color and it’s also like bitter sweet and it goes perfectly with all the Aromas in this dish and then of course you add the peans so literally

Everything and Final Touch is a ton of extra virgin olive oil I think this recipe is delicious it combines quite a bit of flavors but it’s all around the uh sweet and a little bit um acid of the orange I think it’s albach if you don’t try it you’re
