Trever and Steampunk Saloon – time, expertise, and generous use of their establishment

All right Murphy what is the greatest lie perpetrated in the history of bar culture that I’ve had too much you don’t have to go home but you can’t stay here I can’t stay here my mother and Rohde makes an award-winning martini my entire life every time I think of martinis I

Think of one phrase shaken not stirred and you two are telling me that’s a damn lie I’m sorry Brian but the guy who drives an invisible car double-oh-seven he lied to us right look I I want to clear this up so we’re at the steampunk saloon on sixth Street in Austin Texas

Hanging out with the supremely badass Trevor Trevor why is it bad to shake a martini how much water do you like in your drink I would assume as little as possible right exactly that is why when you make a martini you’re going to stir it you’re gonna get a more flavorful drink that

Hits your palate correct there are many cocktails shots things like that that are shaken when you add citrus to a drink that’s when you want to shake it it will combine all the ingredients in the best possible way and Plus you can also shake cocktails with egg or with

Creamer there are a couple of other things that really matter that’s the proportion of the alcohol and type of pipes you use you tell us about the proportions of the alcohol yes what you want is you want a balanced drink you don’t want too much alcohol you don’t

Want too much of any additives say a bitters or a vermouth what you want is balance overall you’re gonna have a better trip from what I remember the basic martini recipe is a two-to-one ratio of gin and vermouth right we’re gonna learn a fancier version an award-winning addition this

Is Albert Romans recipe the renowned New York bartender and this one was chosen by Esquire magazine as the best gin martini you can have so no matter what if you learn this recipe you will never look like a chump making a martini for the rest of your life this recipe is for

Two one gin to remove we’re gonna adjust that for the size the glass a little bit but Trevor’s gonna watch all right okay you want to grab a martini glass you’re going to ice the glass first got the icing does it shows the glass down just a little ice and a little bit

Of soda water and let that sit for just a minute then we’re gonna take our soda water so this is the weird counterintuitive part this well not really I don’t clean the floors oh I paid almost $50 for these boots Trevor well you wasted your money now with this

Recipe that we’re using from Esquire magazine we are going to use an ounce of vermouth and I know this seems like a waste but we’re actually going to put it in the glass swirl it around and then dump it out but we’ll have a nice coating over muth that’s still left in

The glass seems like a sin against humanity well as Alfred Hitchcock put it he preferred the vermouth in his martini just see it from across the room just knowing that vermouth was there once all it takes now with the chilled glass the vermouth will adhere to the sides

What is vermouth by the way it’s just a fortified wine it’s actually from the German word they’re modes or wormwood the same thing that same thing is an absinthe exactly the same thing that allegedly gives absolute release antigenic properties which is a little prompting Satan that old man that’s

Amazing it’s really not okay so right now we have a chilled glass coated with vermouth mm-hmm and now we’re gonna add the gin and we’re gonna stir that gin and I’m gonna add quite a bit of ice here because I want my entire vessel

That I stir in to be cold we’re gonna do a two ounce pour of gin today we’re using Bombay stuff we talked about the different types of ice fancy joints we’ll have a giant block of ice they’ll try to break off big chunks so that they dilute as slowly as possible friends and

You’ll have less impurities in those ice as you’re spinning everything’s moving around is one block you’re not breaking it apart you’re not getting the ice to melt and with ice like this you want to give it about 20 rotations or so now as y’all used to stir my entire vessel is

Starting to chill down this is all about surface area my ice is cold my tin is cold there’s less dilution as I’m doing this but you don’t want to do it too much or you will add water to you can see meanwhile on the chilled glass you

Can see the vermouth still adhering to the sides on there so it’s a four to one ratio one ounce of vermouth gets spilled around in the glass and now we’re doing four ounces of gin correct in the recipe you’re doing four ounces of gin we’re only gonna do two ounces here because

Yeah our martini glass a little small and when you’re busy and walking around with this thing you don’t want to get bumped into and have this go everywhere and again something you should consider this is all booze yeah there’s no sugar in here this is a proper way to drink liquor as Ernest

Hemingway put it nothing makes him feel more civilized so is it a martini yet it is now go for it all right this side ain’t adding one two two olives will add a little bit of salt so now you have many flavors in that one drink it’s so good

You’re telling me to make an award-winning martini all I have to remember is one ounce of vermouth put into a chilled glass fun around pour out the vermouth put in a whole bunch of ice put in four ounces or two ounces if you’re doing a reduced amount of gin

Stir it to 420 25 times pour it in at a garnish and you’re done yes it’s like drinking a cool cloud to jail out I can’t even talk that’s so exciting I gather you guys are really making me jealous oh because technically I’m on the clock and well technically we

Are too but we’re our own bosses you

  1. Sorry dood, but a "more flavorful" Martini comes from aerating the drink by shaking it. The aromatics of the vermouth are accentuated, and it doesn't dilute the drink any more than stirring, and the idea that it is noticeably colder to stir a drink is B.S., it just takes like 20 seconds longer PER DRINK, which means a lot when a bartender has a lot of drinks to make.

  2. Thing is… Bond is served or orders Vodka Martinis most the times. In rare occations he drinks the Vesper or a Dirty variant.

  3. This is how I make my martini. I even actually soak the olives in the vermouth . I've never had a complaint. And I don't shake it either. A girl I work with showed me this once and it has since then stuck with me.

  4. Was a cool place. Sadly, replaced by a beer garden. Not that there is anything wrong with that….Just will miss Steampunk…

  5. I make gin and tonics with a double shot of Seagram's Twisted Lime exxtra dry gin with lime liquor that's been kept in a freezer at about 28°f, a 16oz glass with crushed and cubed ice, toped of with chilled tonic water with quinine, stirred 10-20 times, the rim rubbed and garnished with a lime and served. Secret fact the drink glows in blacklight because of the tonic water with quinine!

  6. people seriously need to stop saying shaken martinis are a "lie" you like your drink the way you like it. I wish they knew how snobby and cringy they sound.

  7. This whole "barely any vermouth" thing is an abomination. With the amount that's used, you might as well just order straight up gin.

  8. Shaken martini is not a lie, it’s a choice like any other method. There is no better or worse way. Drink what you like, the way you like it, nothing else matters.

  9. I order my martini shaken and they come to my table with a small shaker and ice cold martini glass. Smooth!

  10. Was very sceptical at first, come on every bartender ( maybe four or five, six at the most ) that i've ordered it from shook the hell out of the ingridients. The last and only one time i did it myself the the result was mediocre at best. Now having used noilly prat and tanqueray and cheapo olives i am a convert. the result was really perfectly balanced!!

  11. I'd enjoy trying that martini! I prefer a vodka martini made without using ice from a bottle kept in the freezer.

  12. I've heard when your barkeeper doesn't give you an odd number of olives, he doesn't like you. Enjoy your two olives.

  13. I like more vermouth than others i guess… I know it's cool to drink it's close to straight gin for some people but I'm not one of em. 1 to 2 ratio for me

  14. There are only a few types of martinis. Gin is the real martini, if you don't like the taste of gin, then a martini is probably not for you. A vodka martini is still a martini, but not traditional. Either way, gin or vodka, and vermouth. Too much more than that and it ceases to be a martini and becomes something else. A cocktail is defined by the ingredients, not the glass it is served it. As for gin or vodka and no vermouth? Not a martini, just a shot of booze in a martini glass. That's like pouring tequila into a glass, adding nothing else, and then calling it a margarita.

  15. Sooo in other words.. James Bond was actually a PU$$y! My thing is the different Gins.. I prefer 'Beefeaters 24' and Dirty…am I making it wrong?

  16. what kind of bourgeoisie fuckwit decided pouring out an ounce of vermouth was necessary? esquire magazine and all of these hipster fucks on screen can keep this shit.

  17. When people says "Everything is Big is Texas" they weren't lying when the state reveal how much huge amounts of Morons and Losers live out in Texas who think they are bigger and better than everyone else
