    The fat cap is delicious. I always dig through the pile of strips for ones where the gristle/nerve isn’t present.

    I steal my man’s fatty pieces bc he’s particular about his food. The fatty pieces are the best parts of a steak imo.

    I usually don’t eat that part. I’m fine with fat if it’s rendered but this looks chewy. I like pork belly type fat better
