3 tbsp cornstarch (slurry)
4 ounces cream cheese, cubed, at room temperature (about 1 cup)
1/2 cup Parmesan cheese, finely shredded
2 cans of chopped clams, reserve juice
2 cups packed roughly chopped fresh baby spinach

Heat oil from sun-dried tomatoes in a large Dutch oven over medium until shimmering. Add onion and garlic; cook, stirring often, until softened, 3 to 4 minutes.
Add tomato paste and sun-dried tomatoes; cook, stirring constantly, until tomato paste is slightly deeper red in color, about 2 minutes.
Stir in chicken broth, heavy cream, basil, salt, Italian belnd seasoning, garlic powder, and crushed red pepper, bottled clam juice, reserved clam juice from can and cornstarch slurry bring to a boil over medium, stirring occasionally, about 12 minutes. The broth should start thickening
Add diced potato and reduce heat to medium-low; cook, stirring occasionally, until potato is fork tender, about 8-10 minutes
Reduce heat to low, and add, cream cheese, and Parmesan; cook, stirring often, until cream cheese and Parmesan are melted then spinach, clams continue cooking about 5 minutes.
Serve in a hollow out sourdough loaf. Garnish with additional Parmesan, basil, and red pepper, bacon.
