These little beauties are incredible and taste amazing

Here’s the recipe –

Ingredients – 

Salmon Spice Rub – 

2 Tbsp – Brown Sugar 
1 Tbsp – Smoked Paprika
1 tsp (2.5g) – Sweet Paprika  
2 tsp (5g) – Onion Powder
2 tsp (5g) – Garlic Powder 
1/2 tsp (1.5g) – Yellow Mustard Powder 
1 tsp – Salt 
1 tsp – Pepper 
1/4 tsp (1g) – Cayenne or Chilli Powder 

Bourbon BBQ Sauce – 

4 Tbsp – Tomato Ketchup
2 1/2 Tbsp – American Mustard 
1 1/2 Tbsp – Maple Syrup 
1 Tbsp – Brown Sugar 
1 Tbsp – Apple Cider Vinegar 
1 Tbsp (20ml) – Bourbon of Choice 

Salmon & Bacon – 

1.5kg – 2kg (3.3lb – 4.4lb) – Salmon, Skin Off, Cubed 
10-12 – Bacon Rashers, Sliced In Half Lengthways 
Salmon Spice Rub (Above Recipe) 
Spring Onion, Garnish 
Black & White Sesame Seeds, Garnish 
Chilli, Garnish 
Toothpicks To Hold 

Method – 

Preheat an oven to 180.c – 350.f. Line a large baking tray with parchment paper. 

Add all of the salmon spice rub ingredients in a bowl and mix well until combined.

Slice the salmon into large, even-sized cubes roughly 2×2 inches. Place into a bowl and season with the salmon spice rub. Mix well. 

Slice the bacon rashers in half lengthways and wrap each halved rasher around the individual seasoned salmon cubes. Use a toothpick to lock it together and dust the bacon with any leftover seasoning. Place onto a large baking dish lined with parchment paper. Bake in the preheated oven for 6-7 minutes. 

In the meantime, add the bourbon of choice to a pan over medium-high heat and reduce for 1 1/2 minutes. You can also flambé it. Add all the remaining bourbon bbq sauce ingredients and mix well. Bring the sauce to a simmer, reduce the heat to low and cook for 2-3 minutes or until thickened. Remove from heat.

Remove the salmon from the oven and baste the salmon all over with the bourbon bbq sauce. Place back into the oven and cook for 5-6 minutes. Remove the salmon and repeat the process one more time. Remove from the oven and carefully remove each toothpick. 

Evenly spread over a serving platter, garnish with black and white sesame seeds, spring onion pieces and thinly sliced chilli. Dig in. 

Recipe note –

Some people may find bacon and salmon a weird combination but they go together like peas in a pod, especially for this recipe. This is definitely a don’t knock until you’ve tried type of recipe as it’s incredibly delicious. However, in saying this, the bacon can be left out and you can have salmon bites on their own. If you are going to do this, reduce the cooking time by 6 minutes for the salmon to be perfectly medium rare, going on medium (the perfect way to eat salmon).

We’re making maple glazed salmon and the first thing we need to do is slice up our salmon and then just dice each fillet into about even sized pieces add the brown sugar to a bowl along with sweet paprika smoked paprika onion and garlic powder yellow mustard powder

Chili powder and salt and pepper and then whisk to combine add about four tablespoons of the seasoning over the salmon and then just give this a quick mix then we can slice our bacon in half into long strips and then just roll each piece of salmon in that bacon and then

Medium-high heat add in the brown sugar tomato ketchup yellow mustard apple cider vinegar and maple syrup then just mix this around bring it to a boil and then just reduce it for a couple of minutes until thick place that sauce over the sand and we can cook this for

Another six minutes until you have something that looks like this and then we can garnish them with some black and white sesame seeds a bit of spring onion and what you’re left with is this beautiful bacon salmon by

  2. I'd rly like to try this out but it requires so many ingredients I should get only for this dish 😂 can I skip the bourbon (if possible apple cider vinegar as well) or replace it with something else?
