Perfect recipe to use all year round and we’re really amping up that tomato flavor with tomato paste and one thing that makes this recipe a little bit different is we’re actually adding cashews for a little bit of creaminess so the recipe is completely dairyfree and vegan and there’s also lots of

So we’re going to start with some olive oil in our sauce pan then we’re going to add in the onion I’ve us sweet onion here I really like the flavor that it gives the tomato soup and some garlic and we’ll sprinkle in our salt and we’re

Just going to cook this onion until it’s Softened okay these onions are looking perfect and nicely softened so we can add in our tomato paste now and our canned tomatoes I’m just kind of cooking that tomato paste before I add in the canned tomatoes I just kind of want it to get like a little bit caramelized it gets a

Little bit burnt that’s okay and the tomato paste overall is really going to enhance that tomato flavor it’s adding a beautiful Umami when we add in the canned tomatoes obviously we’re going to get even more tomato and it’s going to be delicious okay so we’ll throw in the

Canned tomatoes I am using peeled whole tomatoes for this a large can and then lastly I’m going to be throwing in two cups of vegetable Broth and we’ll give this a stir we’re just going to simmer this for like 10 minutes I just kind of want to warm and combine everything before we add it to our Blender okay so this has been simmering for 10 minutes the flavors have really had time to melt together so let’s get this over into the blender and we can add the remaining Ingredients a little maple syrup is going to enhance the Tomato flavor but cut the Acidity good A taste Test oh my goodness this is such a good tomato soup loaded with tomato flavor it’s not too acidic that little bit of maple syrup really helped to cut that and I’m getting in those really nice basil notes as well it’s creamy it’s tomatoey it’s soupy it’s everything you want in a
