Spicy Sardine Linguine

This Mediterranean inspired dish is quick and easy to make under 20 – 25 minutes

Ingredients:
Can of Sardines in olive oil
Linguine – 100 gm
Tomato paste – 1 – 2 tbsp
Shallot – 1
Garlic – 2 cloves minced
Chilli flakes – 1 tsp
Salt and Pepper to taste
Chopped Parsley for garnish

Instructions:
Cook the Pasta for 8 minutes, reserve pasta water for use later
Saute the shallots until its translucent
add tomato paste and olive oil from the sardine and mix well
add minced garlic and chilli flakes and saute for 2 – 3 minutes
lets add Sardines , season with salt and pepper and stir well
finally lets add the pasta to pan and toss and combine, add little pasta water and cook until absorbed
turn off the heat and garnish with chopped parsley
