Welcome to Inspiteofcreations, I’m Ms. Stephanie today I’m cooking up some Pineapple Mango Salsa with Teriyaki/Jerk Skewers. Its not my typical Sunday dinner but it worked out AWESOME. I hope you try it with your friends and family ENJOY the video.

Y’all and welcome to my channel so today we going to be making some pineapple mango salsa so let’s go ahead and get started so the first thing that we’re going to do is add the peppers I have red and green peppers we add that to the Bowl everything has been clean ahead of

Time next we’re going to add some Tomatoes then we’re going to add our onions so we have green onion we also have um under there we have have the Purple Onion some people call it the Red Onion I call it purple cuz I don’t see the red um going to add that to

It and here we have some cilantro and we also have some um cilantro and some mint next we’re going to add the mango and we’re going to add some of this pineapple not going to add all of it okay and we’re going to give that a stir to incorporate all of the

Vegetables and the fruit and if you prep ahead of time like I did just make sure you keep everything in the fridge until you’re ready to use it with the mint and the cilantro I cut that um well I washed it ahead of time I

Just cut it because I was ready to start cooking but leave that in the frigerator and if you can put some water in there and about two Ice Cube and cover it up so that it doesn’t get bruised so when you ready to cut it it’ll still be fresh ahead of

Time okay okay so now that um everything has been Incorporated we’re going to go ahead and add our seasonings so we’re going to add cumin excuse me this is just seasoned to your preference um we’re going to add the complete garlic your crush red peppers basil

Honey and I have some lime here and I also have lemon so we going to squeeze some of that into the dish so that was the line so now we’re going to squeeze some of this lemon into there and we’re going to start to we going to start this

There our fruits and vegetables and see what taste we come up with and some people add brown sugar to it I don’t see a need to add brown sugar and honey so I opt out and use the honey instead of the brown sugar but like I said your ingredients is to your

Preference okay so next you just want to give it a taste see where it is if you need to add or what you need to do at this ear point so I’m just going to give it a little taste I prefer more red pepper oh I forgot to tell you in that

Um onion uh the onion that I had I also had jalapena Peppers um in there also so I’m going to add more lemon make sure all that’s out y’all never know might be see see what I mean see with some more juice in there now I can discard

It add some more line to it okay let’s see where we are with that this is a healthy um dish is good in the summertime it’s quick it’s refreshing it’s all of that so I hope y’all try this dish it is very good okay so let me give it another

Try I don’t double dip and see where we are give or take I would add some um more humin and and a little of this salt cuz I love this salt I love that I can’t pronounce it but I love it and I’m not going to put too

Much and give it a stir again and we should be ready to put it in our um pineapple okay let’s see where we are this time I’ll use a fork so I can show you guys I’m not using the same thing and double dipping oh I knew it needed something and to me

It was this so we are good with that so I’m going to bring the pineapple over here and the frost that you see is that I keep it cold so when I’m ready to put this over here this will keep this cold so I always just keep it in the refrigerator in the

Freezer until I’m ready to start using it so and it’s gutted out if I didn’t show you guys that so I gutted out everything and I have it sitting on some um wax paper and a paper towel because like I said it was frozen and so this is all you want to

Do is drop that in there and I can tell you this is good over some fish um um over some rice and and um whatever your meat taste is whether it’s steak or chicken it is delicious over that okay let me grab the other bow same thing cut it out

Already and look at those colors just absolutely beautiful and there you go you these beautiful boats they’re pineapple boats they are absolutely just refreshing and so I’mma to go on to the next dish that is with the chicken I don’t want to pick it up while I’m utilizing

The vegetables so give me a minute and we’ll start on the the teriyaki chicken okay so now we moving on to the skewers and I already soaked mine in water already that’s to help it um not burn the uh stick so this been marinating for about 4 hours so what I

Have in here is some Cajun seasoning some crushed red peppers some slap your mama garlic teraki sauce and a little soy sauce and I sprinkled a little of this over it so it should be ready to go in the oven so I have some red uh bell pepper in

Here and I also have some leftover green onion that has been marinating in so it should be good to go make sure all that marinade gets on it and so what you’re going to do is just put your meat I’m not interested in the vegetable I may put one or two on

There so you just going to pack your meat on there I’ll do it for my daughter and put your meat close together as you see I’m not interested in the vegetables because I have that on the boow but I’ll just use it for my daughter okay that’s pretty packed on

There so we’re going to lay that on there you don’t have to lay it on there you can put it on foil if you like but I already greased My Pan so I’m good with it being on there so we packing this real close together

And I can put one of these onions on here I really don’t care to use all of the vegetables right now but since it’s there I’ll go ahead and use it okay there you go ready and there you go and we’re going to put put it in a a

350 oven and let it cook okay so the skewers are out uhoh they’re all done well I can’t pour that juice over in there so they’re all ready to go and I made this um teriak uh sauce and I use the rest of those pineapples and put it in

There and so what I’m going to do to make this sauce you need because I only have the three skewers I made very little it may look like it’s a lot but I used a half a cup of the teriyaki sauce um about less than half of the soy sauce

Cuz I really don’t care for soy sauce some honey some slap your mama some Cajun seasoning some garlic and some brown sugar and some water and I just put all of that in there let it simmer and to make it thick I used about 2 tbspoon of the corn

Starch and I diluted that with water and I just let that simmer and so this is what we have from that simmering and because I didn’t add a lot of the honey to it I wanted to add the Thai sweet chili sauce to give it you know

That kick because I really didn’t even um use any of this I probably dropped two or three flakes in there because I had already put it in the marinade um so that is it and so I’m just going to put some of the uh tie not tie the teriyaki sauuce

With I serve them with the yellow corn um tortilla chips or either the Cool Ranch Doritos it doesn’t matter which one just do not grab the cheesy Doritos it does not go with this dish at all
